Going Vegetarian

I'm seriously considering going veggie, but I'm after meal ideas to give me an idea of what can be cooked and to see if veggie food appeals to me. Right now I eat mainly chicken and only rarely eat other meat.

One of the main reasons I'm considering turning veggie is because I don't agree with the farming methods, but a side reason is I'm overweight, and I've never seen a fat vegetarian..

I don't eat mayo in large quantities, so as awful as it sounds, im not going to worry too much about the eggs in it.

I don't eat a lot of fish, but I'm thinking the occasional piece of steamed fish, or tuna on a jacket isn't going to be too bad. I think i'm going to aim for a mainly veggie diet, but not beat myself up if I end up eating fish or even the occasion meal of meat.

No need to beat yourself up at all! You are making positive changes and we all just do what we can.

Making your own mayo is easy if you have a blender - tasty as well. I also eat shop bought, though.

Franny, how do you make the barley risotto? Do you use pearl barley? Is it more or less the same proportion of stock to barley as with rice?

I use pot barley (more nutritious)

yeah you just sort of keep topping up on stock, but you don't have to do it ladleful by ladleful the way you are meant to with a posh risotto

at the end you add some cornflour and milk, I think (might be making this bit up)

do you want me to go and find the recipe?

Oh Aitch says it is a proper Italian dish with a fancy name and everything

Yes please for the recipe. I've not heard of pot barley. Is that standard health food shop fare in the UK?

Well it can be a little bit hard to get hold of. You could use pearl barley if you can't find it, which has the outer husk removed.

Here are instructions for pot barley:
Put 6 oz pot barley in measuring jug and add water to 1 pint mark. Leave to soak a few hours or overnight. Fry onions / celery / mushrooms (dried mushrooms that have been rehydrated are fab)/ leeks / sundried tomatoes (whatever veg you want, I have used various combinations of all the above, but use something tasty as it is pretty bland otherwise) until tender. Add barley with the liquid and a stock cube. Cover and simmer for 30 - 45 minutes. Add more stock if needed. Add frozen peas near end if liked.

Blend 1 tbsp cornflour with a little milk, then add to barley with 1/2 pint of milk. Heat gently, stir until thick and creamy. Serve with lots of parmesan, salt and pepper

But it's not vegetable matter, is it - in fact the term "vegetarian" is a bit of a misnomer really. There are vegans, and then there are those who consume, to varying degrees, both vegetable and animal matter.

A chicken leg isn't a life form, either - it's a part of an animal, which couldn't survive in isolation. Like an egg.

To start with, if you mainly like chicken, you could substitute quorn in your current menus. Then gradually incorporate more beans, pulses and nuts as you find good recipes.

Not if they were never fertilised, they wouldn't, they would just go off. Only hens eggs which are fertilised become chicks. Otherwise, they are just by products, like milk.

And i don't give birth to a body part every time4 I have a period, so not sure the chicken leg thing works - although I'm sure it would if I was a hungry teenage girl.

however...milkproduction is artificually almost, stimulated by making cows calf every year, is somehting si,milar done to eggs?

i'm a "vegetarian" who eats fish. i like animals but as for fish - hate the bastards

no really. i have had 3 veggie phases in my life so far
1/teenage - very strict, lasted about 5 years
2/30s - still quite strict, imposed on family
3/ the fishie one
