DH has invited vegans for dinner!

Two vegans coming to dinner one night next week. Where do I start?

What can I sub for butter in breadmaker bread? If I have bread I can serve that either a stew and a salad. What sort of stew though?

What about a dessert? I am congenitally unable to make pastry.

Any suggestions gratefully received before panic sets in.

Pudding ~ This time of the year a bowl of mixed summer friuts or tropical fruit salad or a couple of home made fruit sorbets perhaps lemon & orange and raspberry. Or poached peaches or peaches in sweet white wine.

A cuban/puerto rican black bean stew with some avocado and some simple tortillas (made with oil)?

Filo pastry is vegan if pastry is needed.

Baked fruit is a safe vegan dessert, but may be a bit dull.

We always use veg oil instead of butter in our bread maker - never noticed a difference.

Starter ~ Asparagus roasted in olive oil. Or garic mushrooms.

A sub for butter in the bread would be margarine or olive oil.

What is your DH cooking then? Are you going to give him a (small) hand after he's decided on the menu? that's nice of you :)

For pudding, fruit with non-dairy ice-cream (Swedish Glace - they sell it in a lot of supermarkets) or fruit crumble (using vegan margarine instead of butter) also with non-dairy ice-cream are very easy to do.

Any kind of vegetable and bean stew (including chilli etc) with bread or curries with rice would be fine. Or mushroom or asparagus risotto?

Vegan Banana Bread I make this quite often, really easy and is lovely.

I would do a bean stew for main. Easy peasy.

Caribbean stew is awesome.

But spanish chickpeas would be a good alternative.

You can get vegan margarine but it's a bit bleurgh and you'll be left with a whole tub. Flat breads is a great idea, or focaccia, uses oil instead.

Desserts, I'll have a think. But fruit is a great idea. I make a vegan banan bread, so there must be things that can be done, if you want a more cake like option.

Steak and chips cooked in lard. Serve and then look at them in all wide-eyed astonishment 'Can't vegans eat that, then?'
Sit back and wait for the AIBU. You'll soon know if your guests are MNetters! Grin

My Dh is coeliac and his friend dairy-free, on holiday we made an amazing mushroom dish, very simple but really tasty, happens to be vegan. (For non vegans chicken also goes well) Basically fry red onions and mushrooms very gently in oil until soft and delicious. Use the alpro single cream alternative. Serve with rice or pasta. Mmmmm
For pudding I would suggest vegan chocolate brownies, with or without the icecream mentioned above.

I never use butter in the bread machine, its fine without.

Chickpea curry with sweet potato, google there are plenty of recipes

Pudding lots of fruit type puddings

Sadly DH will not be there to cook, even if he didn't subscribe to the idea that you do t keep a dog and bark yourself (I know, I know). These are people from out of town that he is working with.
