Two vegans coming to dinner one night next week. Where do I start?

What can I sub for butter in breadmaker bread? If I have bread I can serve that either a stew and a salad. What sort of stew though?

What about a dessert? I am congenitally unable to make pastry.

Any suggestions gratefully received before panic sets in.

Just to say if you are doing something with veg stock, make sure it is vegan - loads have lactose in them. In fact, anything you are not making yourself triple check the labels to make sure there are no non-vegan ingredients.

it's brilliant with cornmeal dumplings too. Don't be put off by the wierd combo of peanut butter and orange juice. I usually double the recipe and wish I'd made even more, it goes down a treat here!

I'm a veggie almost vegan (damn pizza!!)
Vegan stuff I eat a lot that are easy to make
Falafel (have w hummus and pitta)
Soups
Curry is one of the most versatile
Anything you'd use mince for use lentils instead -ragu/shepherds pie/chilli
Stuffed mushrooms
Imam byaldi which is a stuffed aubergene dish
Ratatouille with olive oil mash mmmm
Risotto w oilve oil not butter (not mad on this but my friend loves it)
Byriani I've seen some good easy bake in over recepies

Most of the time I just eat chips and beans... That's vegan!!

That Caribbean stew looks lovely.

I'd do curries - one mixed vege one, one mushroom one, pilau rice, minty cucumber and onion salad.

There's plenty of dairy free margarines out there. Pure and Vitalite being two off the top of my head.
Starters:

  • vegetable soups - (such as butternut squash, roasted red pepper, general vegetable soup)

main course:
chickpea curry
spaghetti Bolognese made with lentils instead of mince

desserts

plenty of vegan ice cream out there (Swedish Glace is delish and can't tell the difference from normal ice cream!)

Quite hands on though, do a do ahead pudding (or ask them to bring one as you can't think of any vegan puddings and are interested in ideas for next time :))

I'm vegan and have friends over for dinner tomorrow night

Starter: chips'n'dips, I make houmous and this tapenade

Main: roasting fennel, cauliflowers, artichoke hearts and red onion, tossing with a herb sauce (basil, dill, parlsey, lemon zest with presoaked then blended cashews), olive oil, wilted spinach and spaghetti

Desert: chocolate torte you can always get a premade pastry lining (although this "pastry" is stupid easy), just check ingredients

done all before, all either make ahead or just bung in the oven and none of it feels "vegan" IYKWIM. DH bakes all our bread in the breadmaker and never uses butter...I think he uses olive oil?
