DH has invited vegans for dinner!

Two vegans coming to dinner one night next week. Where do I start?

What can I sub for butter in breadmaker bread? If I have bread I can serve that either a stew and a salad. What sort of stew though?

What about a dessert? I am congenitally unable to make pastry.

Any suggestions gratefully received before panic sets in.

A simple, more summery alternative to stew would be roast vegetables (courgettes, peppers, auberines, onions, mushrooms) with couscous (add vegetable stock , then lime juice once fluffed up). You can add salad, and non-vegans can add cheese- goats cheese works well,or cheddar.

For a starter, maybe fresh figs with honey and mint on toasted ciabatta - I have goats cheese with mine.

If you're in Cheshire, I think the Cheshire Farm gin and tonic sorbet is dairy-free (and also delicious!)

'Sadly DH will not be there to cook, even if he didn't subscribe to the idea that you do t keep a dog and bark yourself (I know, I know). These are people from out of town that he is working with.'

No, he won't be there to cook ( even if he could). They'll be working and will all come back together, probably quite late.

That's fine by me. We gave no door on the kitchen, so I can get all the smoke and swearing out of the way before they arrive - and probably most of the gin as well.

If he objects to this perhaps he should have got himself a vegan chef instead of a dog eh?

the nice pressed rapeseed oil is lovely - tastes much nicer than olive oil and it's supposed to be better for you too. Has a nice nutty flavour that would be great as a substitute for butter in things.

Your DH sounds like a massive twat. However I have a delicious vegan recipe for chickpea, butternut squash and cherry tomato tagine. Very easy and just serve with couscous for a lovely Moroccan style meal. Most people would eat without even noticing that it is vegan. I have done this with a lamb tagine as well for meat eaters.

OP is the dog (cook/house-elf) hence why he doesn't expect to bark (bake).

I read it as DH wll be working with these people all day so will arrive with them in time to eat but not to cook Inertia.

Can you just slather baked fruit in loads of booze for pudding. Or dip it in melted dark chocolate - good vegan chocolate is easy enough to find.

Just a note about the wine - not all wine is vegan (they use either fish guts or egg albumen in the fining process), so do check.

If you want to do something yummy for puds you can get soy custard which is quite acceptable (tasty tasty). Do a pie with jus rol pastry of any kind (its made with veg oil).

If OP is happy to cook (with some help on good vegan choices) what's the issue. I took the dog comment as lighthearted/tongue in cheek Grin

This Jamie Oliver Sicilian Squash and Chickpea Stew is a doddle to make and the longer you leave it to stand the more amazing are the flavours. The cinnamon gives it a depth of flavour that is often missing from "throw any old veg in the pan and hope for the best" stews.

Serve with bulgur wheat or cous cous or even brown rice. You can leave it all out and they can help themselves while you lie in bed watching something on Netflix.

Fruit salad for pudding.

Coffee and divorce papers for afters. Grin

This vegan chocolate cake is absolutely delicious. We aren't vegan, but DD and I went vegan for a week when OH was away recently. I made this cake as part of the challenge and it tastes so good. You wouldn't know it was vegan at all. We tried all the vegan milks available and found that Rice Dream was so much nicer than soya milk and almond milk. This cake works perfectly well with Rice Dream. I also used light olive oil instead of rapeseed oil because I really don't like the taste of rapeseed oil.

I disagree. I really don't like the taste of rapeseed oil at all. It is overpowering and reminds me of linseed oil. For baking I would use light olive oil. I even find that sunflower oil gives baking a harsh, metallic taste.

For tea last night we had home made onion bhajis, lentil dhal and gujerati carrot salad. It was delicious.

Talking of Jamie Oliver, his veggie chilli with sweet potatoes and fresh coriander is delicious, and you could look into making vegan tortillas , guacamole and salsa as well as rice to serve with it.

Roasted butternut squash and pine nut tartlets with vegan cheese
Mushroom and ale pie (made with ready made puff pastry - cook the filling in advance and just heat and top). Serve with mash and green veg.
Vegan chocolate cake or poached pears for dessert

I made a vegan version of coq au vin which went down well with my veggie and vegan friends. I also like a good veggie tagine served with cous cous.
I use olive oil in my bread btw.

I went vegan for January and I second Jamie's veg chilli. It's lovely.
For dessert I relied on baked fruit, filo pastry cigars with a nutty filling ( pistachio or hazelnut with agave /maple syrup- something like baklava) or coconut milk and cardamom rice pudding.

Thanks to everyone who has posted suggestions. That has given me something to work with.

To the poster who suggested that DH is "a massive tw@t", he certainly has the capacity (as we all do) but on this occasion he is simply offering hospitality to people with whom he will have been working long and punishing hours.
