I don't want guacamole!

So what else can I do with an avocado?

I have never bought or eaten one until I tried some guacamole off my sister's plate when we were out and I liked the flavour.

Alot of the recipes I'm finding involve salad which I'm not really in the mood for at the minute.

Any suggestions?

I love avocado but hardly ever manage to eat one because they are always rock hard or black.

I like to cut in half and fill the hole where the stone was with balsamic vinegar. Then eat. Avocados are really fatty so no need for oil.

Just cut in half and fill hole with worcester sauce or really garlicky vinaigrette Yum
Or on toast, avocado , chili sauce and sour cream

My dad makes what he calls a carbonara sauce, but instead of bacon and egg he uses egg sauce base, chopped avocado and cooked chicken. Topped over piping hot tagliatelli and with lots of cracked black pepper.

It's amazing.

Just because you mentioned squash, we often make a squash soup with a decent amount of chili flakes in it, and add one avocado (in smallish chunks) just before serving. Very nice.

Halved and filled with hummus is a nice contrast.

(Or prawns & mayo ... did anyone mention prawns?)

Halved, sprinkled with salt and lime or lemon juice (fresh from the fruit, not the bottle) and eaten with a spoon as a quick breakfast.

Never any garlic in my guacamole - just salt and lemon/lime juice into the bottom of the bowl to dissolve the salt, roughly mash in the avo, add a bit of finely chopped spring onion and some coriander, occasionally some finely chopped tomato... and eaten with a spoon or corn chips if they're around.

Avocado on toast. Italian avocado sauce for chicken or pasta. Avocado ice-cream. Avocado with teriyaki chicken and rice.

Avocado with prawns and marie rose sauce was my pregnancy craving.

And all the other suggestions. I could eat a whole one every day given half chance!

Super for your skin too - mash and use as a face mask, although they work from the inside out and I'd rather eat them than wear them.

I think I need Avocado Eaters Anonymous!

One of DH's favourite sandwiches is chunks of avacado and similarly-sized pieces of chicken lightly coated in a lemon mayonnaise. I would add: add rocket or similar and have on granary bread ...

Years ago, we had baked avacado in an Italian restaurant. I think it was in cream and it was incredibly rich. Keep meaning to try and replicate but they don't tend to last that long here.

Perfectly-ripe slides on fresh bread or toast with smoked salmon.

In a wrap with mango and prawn and a dressing with a hint of chilli a delicious Waitrose wrap I had a couple of years ago.

As part of a Californian roll.

We put it in all our salads, well nearly, and my favourite is guacamole with chips, as in potatoes. Also goes well in a prawn stir fry, added right at the end just to warm it.

DD2 has requested ham and palta sandwiches for school.

Delicious.
When I was pregnant, for some strange reason I couldn't eat green vegetables without wanting to be sick. Except avocado. Got me through two difficult pregnancies this.

I'd just love to buy Avocados that are ripe for once!! I cant ever seem to buy them soft enough to eat that day. It then goes in the fruit bowl waiting to ripen by which time I'm over the initial idea or worse still they've gone over by the time I next fancy them. Any ideas on this?

I'd agree with many people above who say basically some things you just eat - few recipes beat just grabbing a spoon and eating it (with maybe salt, olive oil and lemon).

However, I do two things when I want them as a real meal:

  1. cut in half - fill the hole with tomato, garlic and cheese - grill until the cheese turns brown.

or

  1. cut into chunks, fry chunks of mushroom, and add to pasta with chunks of cheese and tomato - just stir it all together so the cheese is just starting to melt - add some garlic, oil, lemon or balsamic vinegar.

Baked avocado is delicious.

Scoop out flesh, mash and season, mix in chopped nuts and blue cheese, pile back in, sprinkle with breadcrumbs, bake.

Avocado update: Ate half for lunch spread on bruschetta with a sort of gooey balsamic thing I had lurking in the fridge, was beautiful.

Then followed those who said it went well with tomatoes/ cheese and am baking the other half in a tomatoey sauce with some mozarella.

Fully intend to purchase a couple more and try out some more of the ideas posted here when I have more ingredients, I am 100% Avocado convert Grin

Chewbacca, I think I agree with you, it definitely isn't as nice hot as it is raw.
