I don't want guacamole!

So what else can I do with an avocado?

I have never bought or eaten one until I tried some guacamole off my sister's plate when we were out and I liked the flavour.

Alot of the recipes I'm finding involve salad which I'm not really in the mood for at the minute.

Any suggestions?

The Chileans have it in a steak sandwich with tomato and mayonnaise.

Mmmm, avocado.

Love it sliced on hot toast, possibly with a ripe sliced tomato, some salt and pepper and maybe a drizzle of tobasco.

Great in a pasta sauce: cut cherry tomatoes in half, mix with a drizzle of balsamic vinegar, salt & pepper and olive oil, place on silver foil (to catch juices) under hot grill for 3-5 mins Cut avocado into chunks, add under grill for 1 minute. Mix into cooked pasta (including all the juices) and add lots of parmesan :)

Cut in half, scoop out stone. Pile high with cottage cheese/fromage frais, touch of fresh ground pepper, eat.

Lovely with mango, too, with a mustard/honey dressing.

Yummmmmm.....

Cut it in half and fill it with prawns in marie rose sauce. not very exciting admittedly, but delicious.

Or slice and serve with a fresh ball of mozzarella, black olives, some sliced tomatoes, fresh basil, olive oil and balsamic vinegar, lots of fresh black pepper and some lovely Italian bread.

I just put it in my sandwiches, goes great with cheese, tuna, ham etc. Its also really nice mashed up with a tin of sardines (also mashed)…add some natural yoghurt and put on toast or as a dip…its soooo good!

BAT Sandwiches: Bacon, Avocado and Tomato on toasted bread (preferably wholegrain or sourdough) with mayonnaise. Or just mashed on toast with chopped tomatoes on top...

Mash it onto rye bread and then top with smoked salmon and a good twist of the pepper mill and a squeeze of lemon juice. Tonight I'm doing a salsa with diced avocado, spring onions, cherry tomatoes and red chillies and serving with grilled chicken breasts and possibly rice. I'm not sure on the carb component yet!

Bake avocado quarters (skin removed) in an Italian tomato and basil sauce topped with mozzarella cheese and chilli flakes.

My first-ever avocado, years ago in USA, was served simply with chopped strawberries piled in the hole. Unfortunately, I can no longer remember whether this was a starter or pudding, but it's still really good, and a change from my travelling version, mashed with salt & lemon in small, plastic container, served with crackers (presently Carrs Cheese Melts) packed in second similar container.

To those talking about sushi- have a go at making it, it's really easy! Much nicer than supermarket stuff.

I love avocados but struggle to get them at the right moment; they are always rock hard when I buy them then turn black in the fruit bowl while I forget about them. On days I plan to make guacamole they are never quite right (and shop bought guacamole is a horrible acidic travesty). I would estimate half of the avocados I buy get binned.

Chocolate Avocado Pudding, it is wonderful and children love it. Pudding in the sense of American pudding, which is kind of like a thick custard or crème patisserie.

Puree an avocado with your choice of sweetener, I like to use honey. Add cocoa powder, use 1 teaspoon to 1 tablespoon depending on how chocolatey you like it. If it taste a little bitter you can add a bit more sweetener. Ta-da! It's so rich and yummy. I have also folded in whipped cream to lighten it. It keeps really well in the fridge, just wrap it will plastic wrap and push the plastic wrap so it's touching the avocado.

You can just eat it from the bowl, but I really like to take hulled strawberries or raspberries and pipe it into the holes. Mmm.

I'm just having 1/3rd of an avocado with my lunch. Thin pitta bread, insides "buttered" with pesto sauce. Chuck in some tuna, the avocado and some cheese. Chuck in the panini press. Yum!

I love Avocado. My grandparents had trees in their garden (not in England) and we used to have them for breakfast, lunch and dinner (he had lots of trees!). 1/2 an avo, which was the size of a human head Grin, with salt, pepper, vinegar and hot buttered toast. Yum....

I usually mash it up with cream cheese and eat with oatcakes. Also nice mashed up with banana.

I make a salad with rocket or watercress, chopped tomatoes, avocado, smoked salmon and toasted pine nuts - drizzled with olive oil...delish.
