Mixed vegetable soup;
Ingredients:
2 carrots (peeled and chopped into 1cm thick slices)
2 large handfuls of spinach
1 leek (skin peeled and chopped into max. 2cm slices)
150g of navy (haricot) beans
1 shallot (chopped)
A few sprigs of coriander (does sprig work?)
To start, pour a small amount of Olive oil into a saucepan and turn hob onto a low heat. Simmer shallot until golden brown. Add more oil if starting to burn.
Add leek, carrots, beans and spinach. Pour water into pan until just covering the vegetable. Put lid on saucepan.
When it starts to bubble, time for 15 minutes.
After 15 minutes, check if carrots are soft. If not, leave for longer. If so, turn off saucepan. Leave to cool slightly.
Either blend in blender with coriander (add stalks) or mash with potato masher with chopped coriander. Remember not to leave in blender too long otherwise it will be watery!
