Creamy Asparagus soup

Fry off onion in butter
Add chopped asparagus
Put a lid on and sweat for 10 minutes on low heat
Add tablespoon of flour and stir
Add chicken stock and lots of black pepper.
Simmer for 20 minutes then blitz and swirl in creme fraiche

Tis yummy!

I love soup and need to get back into the habit of making it more often - soup is usually very healthy. I need to lose weight and have been thinking of making up a load of soups and put them in the freezer so I just have to get a portion of soup out for lunch each day.

My favourites have mostly been mentioned on this thread, but Im just marking my place as I will be back to read it properly.

Chicken or prawn noodle soup add spring onions/mushrooms/carrots/courgettes/whatever, chicken or veg stock, fine rice noodles and soy and coconut milk. A splash of chili sauce if you want it spicy. A few bits of dried seaweed is also a good addition.

The above can be done with seared tuna or wontons on top instead of the chicken or prawns, or a chopped up omelette if vegetarian.

Also cauli/broccoli and blue cheese

a Scots Broth type thing pearl barley, lamb or bacon and grated carrot/onion/swede in a stock.

Minestrone type bacon, cannellini beans, orzo or other small pasta shapes, or just broken spaghetti, with veg cut up small carrot/onion/courgette, green bean, cabbage etc - I put some tomato but not loads in.

Ive also made up a type of Spanish fish soup, after having it in Tenerife a couple of times I couldnt find a recipe, but I just simmer some finely chopped onion and garlic in fish stock until nearly soft and then add some pasatta and a handful of rice. When the rice is nearly cooked 10 to 15 mins, add any type of fish I usually use a bit of white fish, some prawns, a few scallops and maybe some mussels (I have bags of all these in my freezer and just take a bit of each out to defrost) this will all cook in 2/3 mins then just serve.

The other soups I have been thinking of making is a spicy tomato/chick pea/cous cous soup I saw a picture in a recipe book but didnt buy it I just need to get round to experimenting to get the quantities right.

I have two Covent Garden soup books and need to get them out to use again but there are some great ideas on this thread.

Fry onion and garlic, add tin chopped tomatoes and a few ml of veg stock. Add handful of red lentils and simmer until soft. Blend. I usually take a few spoonfuls out, blend and then put the removed portion back, so it's thick but with a bit of texture. Season with lots of pepper and thyme.

Sometimes I add a tin of mixed beans and a pinch of chilli powder. I squash some of the beans with a spoon and leave the rest whole.

Off to read all the other recipes now. I love soup.

I haven't made soup for ages but will make some at the weekend. My easy peasy recipe is to fry some onions and garlic with some cubed organic beef, add water and throw in whatever vegetables you have to hand (leeks, broccoli, peppers, carrots etc) plus a stock cube, a pinch of herbs and salt and pepper, bring to the boil, simmer, then blend.

I called this 'Power Soup' when my sons were young and they LOVED it!

My fave is roast squash and parsnip. Roast the squash and parsnip, then blend together with stock. The recipe calls for apple cider vinegar which I never have, but sometimes I put a bit of apple juice and white wine vinegar in it if I have it. Delicious sprinkled with Parmesan and toasted pine nuts.

Veg 'French' onion soup: as many onions as you can be bothered to slice, sweated in butter for ages until starting to caramelise, add flour and cook, add veg stock and a bit of Worcester sauce (or soy at a push), bring to boil, simmer for about 30 mins. The longer you can fry the onions the tastier the soup, and if you can be bothered to make your own stock it's well worth it with this one.

I just made soup for lunch funily enough.
I buy those chopped bags of soup veg from tesco, add 2l of water and 2 stock pots and a chicken breast. Simmer for 30-40 minutes, fish out the chicken and shred it up and add back to the pan. Serve with crusty bread.

This is so easy that I don't know whether it counts as 'making' soup. DCs love it though and it's very good for them. Makes enough for one child, scale up as necessary.

One tablespoon of hummous
2 teaspoons of pesto
As much water as you want to make it the consistency you like.
Mix, heat in microwave. It thickens as it gets hot, so make it a bit runnier than you think.

(I don't like it much myself, but they do)

Amazingly delicious and warming Asian chicken broth:

The base is chicken broth, so it's tastier if you make your own. Reserve some of the meat from the carcass.

Heat broth, add ginger, garlic, lemon juice and soy sauce to taste. Simmer. Add noodles and left over chicken. Could also add some dark green leaves (like bok choi). It's delicious and really healthy.

This thread could not have come at a better time...it gets down to -30 here in the winter, I'm trying to lose weight, and we're broke as a joke. :o All these things add up to a soup filled winter for us! Also, I've just seen a recipe for bread that looks so easy even I can't mess it up. So soup, fruit, and bread warm from the oven it is this winter, at least a few times a week! :)

So many good ideas here!

I find that nearly all the soups I make can be 'padded out' with a tin of (rinsed) chickpeas or cannellini/haricot/black-eyed beans added at the end, after blending. This can come in handy if you have an unexpected extra mouth to feed!

Likewise, any small pasta can be added near the end (but after blending!)
