Lookimg for inspiration and as per usual I come on Mumsnet. About to do my weekly meal plans and can't think of anything...

Any ideas?

Love threads like this, always inspire me to do some different stuff. Anyway, here's what we have planned for the week:

Chunky sausage pasta and garlic bread
Eggs, bacon, baked beans, tomatoes fry-up
Baked potato with sardines in tomato sauce/cheese(that's me eating alone while dh works)!
Pork cassoulet (from freezer) and basmati rice
Salmon bake (will easily do 2 nights)

Laying off the puds at the moment as trying hard to cut down on sweet stuff. Low-fat fruit yogurt will have to do!

am liking the sound of sausage pasta....and indeed sausages in a casserole type thing...can anyone supply a recipe?

Chunky sausage&tomato pasta (from BBC Good Food magazine):

1 tbsp olive oil
4 thick pork sausages cut into bite-sized pieces
2 garlic cloves, crushed
200ml white wine
1 tbsp tomato puree
400g chopped tomatoes/or we use a portion of Jamie Oliver's tomato sauce to boost veg intake
500g pack rigatoni, penne whatever pasta shapes you have
parmesan, to serve

Heat olive oil in a heavy-based pan and add sausages. Fry for about 8 minutes until golden and cooked through. Tip in the garlic and fry for 1 min. Pour in the white wine and boil until it has reduced by half. Stir in the tomato puree and tomatoes, season to taste. Simmer for 15 mins until the sauce is rich and thick. While the sauce cooks, boil the pasta according to pack instructions and drain. Stir cooked pasta into the sauce, serve with shaved parmesan. Can make it spicier by adding a pinch of dried chilli or a chopped red chilli as you fry the sausages.

Sausage in red wine easy too - just need sausages, bacon (or lardons), 1 onion, handful of mushrooms and lots of redwine. Cook onion add sausages, chuck in bacon, and then mushrooms and then throw in a spoonful of flour and then chuck in loads of red wine and put in oven for 1 hour.

I usually serve with rice but could do it with potatoes....
