I spent the afternoon making cookies, jam tarts, mince pies and gingerbread with the kids. I usually do it Xmas eve but I'm at work and only have Xmas day off after today so it was a now or never effort! Don't think there will be much left by morning either 😂

timeisnotaline · 22/12/2018 20:36

You are ALL being extremely unreasonable if there isn’t a follow up thread with pictures of the finished products!! Those of you making gingerbread cookies, a cafe near me has delicious gingerbread cookies which are soft and chewy (and most delicious). I’ve googled but been unable to find any recipes which promise to deliver this. Does anyone have one?

OhioOhioOhio · 22/12/2018 20:42

Next year we are doing gingerbread advent calendars.

Serin · 22/12/2018 22:42

Mince pies, Christmas cake x2, gingerbread men, rum and raisin fudge x5 tubs. Going to do sausage rolls and butternut, brie and cranberry filo pie tomorrow.

didireallysaythat · 22/12/2018 23:04

@sophisticatedsarcasm could I be so forward as to ask for your lemon drizzle recipe? I've made a few off the internet and they've always been a disappointment....

sophisticatedsarcasm · 22/12/2018 23:12

@didireallysaythat
Yeah no probs, I think my Nan took it from a recipe book but not 100% sure
225g butter
225g caster sugar
4 eggs
2 grated lemon rind
275g self raising flour
2 teaspoons of baking powder
4 tablespoons of milk

I’ve put the ingredients in the order to mix it, the mix looks very heavy but trust me when I say it doesn’t turn out like that.
Gas mark 4 for 35/40 minutes.
I couldn’t tell you the instructions for the drizzle as she forgot to write it down 🙈 I just used lemon juice from the 2 lemons and granulated sugar. No measurements I just played it by ear. But I’m sure you could find somewhere online for that. Use a skewer to poke loads of holes and remember to drizzle whilst the cake is still hot 😊

didireallysaythat · 22/12/2018 23:17

@sophisticatedsarcasm thank you so much! I will make one tomorrow, along with a banana loaf.

PrettyLittleBrownEyedMe · 22/12/2018 23:29

So far I've made:

1 batch star-topped mince pies ( but they've gone already Sad)
1 batch tree-decoration biscuits
1 batch chocolate orange fudge
18 mini cheese and leek tarts
about 30 sausage rolls with chilli and feta
1 christmas cake
1 tub marzipan and almond amaretto ice cream
1 lemon tart (hoping this will freeze ok; someone on the internet said it would Grin
2 jars courgette pickle (not strictly baking, but still...)

still to go: 1 Nigella clementine cake for a birthday on 28th
1 tiramisu
1 apple strudel
and 1 game terrine

Love it love it love it, would do this all year if I could!
All your lists sound fantastic, need recipes for lots of them!

LiquoricePickle · 23/12/2018 00:48

3 dozen mini mince pies

I've also made a birthday cake for tomorrow!

LiquoricePickle · 23/12/2018 00:52

Oh and I forgot the savoury things !

I've made tiny cheese, onion and olive scones, puff pastry vendors in three flavours, spiced nuts, mini pretzels and I still have pistachio sables to go. And also Nigella's Christmas morning muffins

Fantail · 23/12/2018 01:38

@sepsisandAKI of course! Recipe is here - www.taste.com.au/recipes/chunky-choc-ginger-slice/f4aa4089-73e3-41d8-b171-eafe98b319a8

Fantail · 23/12/2018 01:44

And the rocky road is now choc mellow fudge at request of DD.

I’ve also made some seed crackers. These are super easy, and great if you have diabetics, vegans or gluten free types around as they are very low-carb - www.bite.co.nz/recipe/11727/Seed-crackers-gluten-and-dairy-free/

BernardsarenotalwaysSaints · 23/12/2018 01:50

I made a 2nd Christmas cake today, made the other at the end of November, I'll marzipan them tomorrow & ice Christmas eve. The one I made last month will be cut in half (I always make square Christmas cakes). One half will go to FIL, the other will go to my Uncle & Aunt. I make them both far later than I used to. FIL & A&U don't like them with too much booze & dh doesn't like them fed at all.

I made pastry today too so dh & the dc will be making mince pies tomorrow. Lots of them.

FixItUpChappie · 23/12/2018 02:00

I just started my modest bit of baking for family....

today prepped sugar cookie dough - half red peppermint, half white vanilla - we will be rolling them into candy canes.

Also made almond shortbread thumbprints with glacé cherries and and almond-milk drizzle

Tomorrow I'm making mini cheesecakes and the kids will do sugar cookie cut outs and decorate them

I'm determined to make Mary Berry's Christmas Pavlova wreath....I'm going to pre make the ring and whip up the cream Christmas Day. I've never had Pavlova in my life so we will see how it goes 😳😁

Koalablue · 23/12/2018 02:20

I love xmas baking but yesterday was 41deg, today not much better. Except for a few things all my baked goods are from the shops.

DrWhy · 23/12/2018 10:20

So far I’ve only made the Christmas cake - and that was yesterday! Mince pies today and cheese straws planned on Boxing Day. Along with making the desert and pre-making stuffing balls and pigs in blankets for Christmas Day that’s all I’m going to manage this year. I do have a 6 week old and a just turned 2 year old though! The 2 year old likes to bake but mainly stirring and tipping...!

NoWordForFluffy · 23/12/2018 12:04

Pepparkakor wreaths done (with photo from book to compare to!). I don't think they're too bad really, as a first attempt. Mustn't eat biscuits until I'm done next time though! Xmas Grin

@NoWordForFluffy that looks amazing! Was it a pain to do?

My gingerbread cake is just finishing off in the oven. My house smells lovely Xmas Smile

NoWordForFluffy · 23/12/2018 14:01

Thank you! I'm quite pleased with it bearing in mind I'm not crafty!

And no, less of a pain than I anticipated, actually. The icing was the worst bit.

NoWordForFluffy · 23/12/2018 14:01

I love the smell of Christmas baking!

thenewaveragebear1983 · 23/12/2018 14:25

I've just done my gravy and my sage and cranberry butter for my turkey, gravy will freeze once its cool. And ds1 made these with only minimal help, for our Christmas Eve walk tomorrow

sepsisandAKI · 23/12/2018 21:15

@Fantail they sound fab and not too tricky I may add some crystallised ginger too. Thanks. Also like the sound of those seed biscuits. I’m going to make some slow cooker fudge tomorrow I think.
Some lovely recipes and pics!

Fantail · 24/12/2018 08:25

They are very easy and quite gingery. DD has been eating them warmed up as a dessert
