I haven’t done a Christmas cake this year, but I’ve been baking with DD this week.

So far we’ve made a big batch of mince pies and gazillions of stained glass window biscuits for DD’s school friends.

We are making a Yule log at the weekend and we always make sausage rolls and bread (for Christmas Day breakfast) on Christmas Eve.

MerryBear · 19/12/2018 15:26

Yesterday made mini mincemeat pinwheels and apricot marzipan flapjacks.

Tomorrow will I top a cider fruit cake I made last week with marzipan and a salted caramel royal icing drip.

At the weekend I will make a sticky toffee Xmas pudding.

All gluten free, dairy free, egg free and soya free for DH as he can’t have those. I can’t eat any of them as I can’t have nuts/dried fruit for low FODMAP purposes.

BendydickCuminsnatch · 19/12/2018 15:28

Hmm not baking this week but making chocolates for my mum tonight (the thought of tempering is terrifying me! Hence I’ve left it so late) and decorating Xmas cake.
Last week made gingerbread house and biscuits, biscuits were left uniced as I juuuust could not be bothered. Made marzipan fruits for my dad too. That’s it for this year I think! Not hosting or anything so yay.

lanbro · 19/12/2018 15:29

Yep...10 Bailey's cheesecakes, 6 other cheesecakes, 2 giant cookies, 84 mince pies, Christmas Cake, choc fudge cake, cupcakes...all customer orders to be ready for Christmas eve! Will also make something for Christmas day but will think about that later😫

BendydickCuminsnatch · 19/12/2018 15:29

Tarty chocolate bark is just melted chocolate stopped with sprinkles/sweets etc and then broken into shards! Super easy but the most satisfying.

GlowWine · 19/12/2018 15:42

Yay I found my tribe. I have just finished baking the cookies/biscuits/lebkuchen that I give away as presents to friends, colleagues and teachers.
From right to left, top to bottom (mostly German):
Friesenkekse
Zimtsterne
Alpenbrot
Kardamom Spritzgebäck
Lebkuchen
Haferflockenkekse
Nutella Cookies
Jam Thumbprints
Schokomonde

I also baked a Pistachio and Rosewater Stollen, but no mince pies or fruit cake in this house Wink

Tartyflette · 19/12/2018 18:12

Thank you, NoWord, looks yummy!

IggyAce · 19/12/2018 18:16

Friday I’m off to SIL and we will have a baking day. Currently planning cranberry and white chocolate cookies.
Shortbread and some sort of pudding for a party on Saturday.

Knittink · 19/12/2018 18:19

Dc and I made a gingerbrrad house from scratch at the weekend. First time we've made one at all. I don't know what possessed me - it took hours!

@Knittink that looks awesome!!!! 👏👏👏👏👏👏

Wow @Knittink that's impressive! Now the gingerbread house is where I go for readymade, my engineering skills would not be up to the task. But the DC and I are expert decorators, this was last year's effort, not done this year's yet (too much biscuit baking going on...).

sophisticatedsarcasm · 19/12/2018 20:13

I have to bake tomorrow for work, I used to take in chocs or biscuits but whilst I was on maternity leave 6 years ago and got into baking took some into work and they went mental for them, now every year they request them. Even the pastry chef that was working part time with us said they are the best....
so I am baking
24 Christmas vanilla cupcake
12 chocolate fudge cupcakes and a lemon drizzle traybake....
Thankfully the kids are out all day with DP, I have work in the morning and then will start the memmouth task 🤣

Knittink · 19/12/2018 20:20

Thanks Grin. Ds apparently thought we were going to eat it the moment it was finished Shock. Not bloody likely after all that effort!

It's just us and the 2 dc for Christmas and they don't like Christmas pudding, so I'm going to make triple chocolate log from the GBBO book. It has white chocolate mousse and dark chocolate mousse inside.

Knittink · 19/12/2018 20:21

GlowWine - that gingerbread house is amazing! A lot more creative than mine (which was also out of the GBBO book!).

Smurfybubbles · 19/12/2018 20:33

I hand out homemade goodies as gifts this time of the year, I love it! So far I've made 2 batches of chocolate fudge, shortbread and pretzel bites with another batch of each to go tomorrow. I package them up in little cellophane bags with ribbon. I'd normally make gingerbread men and truffles but I seem to have double the amount of people to do this year so have kept it simple Grin then I have the small matter of transporting it all back home to Ireland in one piece!

RiskIt4Biscuit · 19/12/2018 20:42

So far, all I've baked is mince pies. My DH made the mincemeat and helped a bit - which was really nice. I usually prefer making them myself, but I could get used to baking with him :)

I am planning on making sourdough Stollen and panettone.

I will probably also make English muffins or some rolls for breakfast (will freeze them), sourdough bread (for lunches/sandwiches) and some Danish Christmas biscuits with cinnamon and almonds on top.
I'll also do some sausage rolls (not in puff pastry though).

It does however depend on what I can be bothered with - I'm 37 weeks pregnant and I am noticing that I don't have the same level of energy as I had last year, where I baked loads.

JingsMahBucket · 20/12/2018 05:55

@NameChangeToAvoidBeingFound could you possibly use that “ruined” fudge in homemade ice cream? You could either swirl it through the mixture or chop it into chunks and mix it in like that. If you can’t be bothered to make your own (and I wouldn’t blame you) then maybe chop it up to use as ice cream toppings or stir into hot milk to make hot chocolate.

Everyone’s holiday baking sounds so impressive. I’m a really slow baker so I would be so shattered trying to do all your amazing feats. Happy eating! :)

shiveringtimber · 20/12/2018 06:25

I used to make a beautiful Christmas cake, minced pies, trifle (for those who don't like Christmas pudding) AND my favourite shortbread but I'll be grateful if I find time for just the shortbread. I use rice flour along with regular flour which makes it light and crisp.

shiveringtimber · 20/12/2018 06:27

Mince not minced!

PipGoesPop · 20/12/2018 06:37

Only part way down the thread and so jealous! My immediate family is very small and everyone except me hate Christmas pudding/cake and mince pies.

I have family coming on one day but they all bring dessert things (even when I say, oh just bring yourselves/bottle of wine) and more baking seems such a waste. Who will eat it all?

MaverickSnoopy · 20/12/2018 06:50

This year we have a newborn so decided to scale back massively and will only be making mince pies and peppermint creams. Although we have some marzipan and lots of chocolate so should probably do something with that. Good job because I seem to have got some kind of delightful infection (sore throat/chesty cough).

Usually I also make a Christmas cake, Christmas pudding, truffles, chutneys, jams, sausage rolls and cookies (as a minimum). I'm feeling quite jealous of you lot. I went to M&S the other day to buy things to bung in the freezer. I've even bought 2 boxes of mince pies to supplement the 12 homemade I'll be making - I say "I" but actually I'll be delegating to the DC.

PerverseConverse · 20/12/2018 06:57

An iced gingerbread cake, and a pear and chocolate tart. We made mince pies a few weeks back and I made a chocolate fudge cake for my daughters birthday last week. We are going to bake stained glass cookies on Christmas Eve. Or maybe tonight actually.
I'd bake more but with only 5 of us it won't get eaten.
