would you put this in a salad?

Doing a Mexican dinner party tonight and have started the prep.
I'm doing a cold mexican rice salad. So far I have (packet - don't judge me) rice, radish (advised by google), red pepper, red onion.
Q - I'm thinking of adding some spinach and maybe some mango??
What do you think?
Ps - no beans allowed due to one of the guests.

by the way - the rice is a Mexican style rice, not plain white rice.

I would add chopped fresh coriander, diced cucumber, tomatoes and some chilli for heat. Maybe add avocado and lime too? Beans are pretty much what I was thinking though! Add some chips and dips and sounds amazing. Have a wonderful fiesta!

I’d not put avocado with rice but cucumber and some chilli dressing - definitely.

Avocado and cucumber are both absolutely fine with cold rice.

I'd add cucumber and tomato with a lime chipotle dressing
Coriander if you know your guests like it
Personally don't think spinach or mango work in that dish

Mango is too sweet for the other ingredients in my view. If you want something sweet in it, what about chopped apple?

I wouldnt do spinach, its too 'long'. You want small chopped items to make the texture consistent.

What a shame about the no beans, they just make a Mexican salad! Perhaps some sweetcorn for texture?
I’d also do finely chopped tomato, cucumber, and try and add cumin somehow to your dressing (with lime). Definitely don’t think spinach and mango would work.

Ooh I forgot - I'm going to serve it with small corn cobs on top of the salad.
Also on the menu are chicken fajitas and chips/dips and Sol beer!

You could also take half of it and add beans. How many people can't eat beans.

No not mango! Or pineapple. Only coz I hate it!

Really nice fresh chopped tomatoes, peppers, toasted garlic, sweet corn, paprika, fresh coriander, jalapenos, spring onions, peas? Dk if peas are Mexican. But in the absence of beans?

What do you mean by small corn cobs?

If you mean baby corn. Dont

If you mean half corn cobs, do, but cut the sweetcorn off the cob before cooking and put it in the airfryer to scorch/blacken and serve it in strips on the salad.

You can of course just char sweetcorn in a pan, which I find easier to be honest

Maybe make a mango and chilli salsa to have on the side. I wouldn't put it in the salad. Ask a guest to bring some avocado.

Just had a thought mango salsa with chopped chilli coriander and peppers use it on the side. Spinach you could serve as a leafy salad perhaps?

I hate fruit in savoury dishes personally so I would not put the mango in however if your family like that combo, go ahead.

Mango yes but ditch the spinach as it’s awful stuff and nobody will care or notice if it’s absent.

I can't think of anything less likely to go together than spinach and mango!

Mango is widely used in mexican food but I am not convinced it would go with radishes and spinach. I'd probably do rice, mango, quinoa or brown rice (to replace beans), chili, cucumbers, lime juice and plenty of coriander.

I think mango and spinach both sound fine.
