would you put this in a salad?

Doing a Mexican dinner party tonight and have started the prep.
I'm doing a cold mexican rice salad. So far I have (packet - don't judge me) rice, radish (advised by google), red pepper, red onion.
Q - I'm thinking of adding some spinach and maybe some mango??
What do you think?
Ps - no beans allowed due to one of the guests.

Go easy on the coriander as suggested by quite a few as for some of us it tastes like soap

Defintely a no to baby corn! I sometimes use tinned sweetcorn rather than fresh corn if I’m short of time (plus red peppers, tomatoes onions and cucumbers). I second the idea of adding black beans and reserving a portion without

I'd do a mango salsa on the side but not add it to the rice. I like spinach but I don't think it's quite right in this dish. If you are going to use avocado, I would serve it sliced separately or as guacamole. Coriander would be a great and authentic addition but some people find it tastes like soap, so do check with guests first.

I meant 1/4 full cobs! Slightly charred.

Yes and I have. I never use tomato because I am allergic. I use white rice, peppers, and onions to balance sweetness. If you don’t have peppers, dried spices work just fine.

the catch is that mango is moist so drain well or let it sit for a bit after cutting on some paper towels, then add.

Spinach and mango a bit weird. Tomatoes and cucumber would work. You could also do mango on the side with lime and chilli.

I wouldn’t put spinach in that, I’d do some toasted sweetcorn and chopped avocado, plus finely diced tomatoes, coriander and lime.

Spinach is too earthy and has a funny texture on the teeth.

Mango is actually really nice in a rice salad, you quite often get mango salsa too so it would go well with the tex/mex theme imo. A cumin vinegar dressing is what we usually add. I wouldn't bother with the spinach though.

I’d have optional jalapenos and coriander (and refried beans) for people to add their own! I personally absolutely love both

Looks lush! Fwiw I'd have said yes to the mango but no to the spinach personally.

I often serve a mango salsa with Mexican food (mango, red onion, lime, coriander, tomato), so I think why not??

I wouldn't use spinach. Possibly some mango if properly ripe but not too soft

Mango is fine in rice dishes generally, especially spicy ones, but it will make it seem less Mexican I think. It's not really an ingredient you tend to get in Mexican dishes.

I almost always do mango salsa with Mexican style dishes, my teens love that and street corn salad.
