Doing a Mexican dinner party tonight and have started the prep.
I'm doing a cold mexican rice salad. So far I have (packet - don't judge me) rice, radish (advised by google), red pepper, red onion.
Q - I'm thinking of adding some spinach and maybe some mango??
What do you think?
Ps - no beans allowed due to one of the guests.

Yes to the mango salsa. No to putting it in the salad.

I don’t think spinach goes with the Mexican theme. As for mango I could take it or leave it but I prefer it in Asian salads. There’s a lot going on in that rice salad already and I wouldn’t be that keen to add anything other than maybe lime or coriander.

Totally agree. Not that I've seen it mentioned but capers are disgusting too.

I’d add tomato only, no mango or spinach, and definitely no coriander (it tastes like soap to me and ruins any dish).
