What cheese do you use on your lasagna top?

Boring question alert 🚨

Had a 10 year old admonish me for using cheddar cheese last night! Her mother only uses buffalo mozzarella and Parmesan don’t you know.

I’ve always just used whatever cheddar we have knocking around as I really don’t like the after taste of Parmesan and find mozzarella bland. I know it’s not authentic

i think my lasagna is gorgeous.

I found with my dds' friends up to about age 10, sometimes they said the wrong thing, but it was just undeveloped social skills. Eg. One of dd's friends with a large garden said our garden was tiny. Yes it is. There was no malice behind it and she grew into a perfectly nice, polite and tactful girl. In fact I remember her coming over and dd saying our house was messy and the same girl said she liked mess, when she started to get the hang of polite social skills. The lasagne girl might have just sounded judgy because her social skills aren't yet mature. Depending on upbringing she might get the hang of it soon.

Authentic Italian lasagne do not contain mozzarella.

I can assure you that my very Italian MIL does make it with mozzarella! But like many Italian recipes there are a lot of regional variations.

Some combination of cheddar and parmesan plus mozzarella or whatever other cheese we have.

Used to be Parmesan and mozzarella, but one DC will only eat Asda four cheese blend, which is mozzarella, mild cheddar, double Gloucester and Monterey Jack, so those go on it now.

I always use cheddar and my lasagna is famous (locally) in a good way. Like you. So I think the aforementioned 10 year can get her mum to cook. Or just be grateful for what she gets.

I use a good strong cheddar in the white sauce and on top. I know it's not authentic but I like it!

I put mozzarella on top of every layer of béchamel as I love the soft, gooey, stringy texture it adds once it’s been cooked. As it doesn’t taste of much, I then add cheddar on top, so I’m getting the best of both worlds!

Also, I am sure Italians would use cheddar and similar if it was an Italian cheese 😉

Mine does (Italian parents and GP, generations ad infinitum and all use the same recipe).

Just mozzarella. I'd put cheddar too but dh and dd don't like cheddar.

I can't eat bechamel so I use a mix of cheddar and mozzarella, although I will just use cheddar if it's all I have in.

I do this, but use Parmesan instead of Cheddar on top.

I wouldn’t turn my nose up at Cheddar though, if I’d forgotten to buy the Parmesan. In fact any cheese! It’s all very delicious..

Plain bechamel with a sprinkle of parmesan. However bechamel is quite flavoured anyhow, with the onion herbs etc. that you are supposed to use. It's not a simple white sauce.

Cheese in bechamel is mornay sauce, which is what I use 90% of the time using parmesan and gryere if I have any in but I also add finely chopped chives in the sauce.

I sometimes use ricotta with pecorino, parm and a beaten egg, it's very rich and indulgent.

I’m with your 10 year old! Cheddar is a superb cheese, but not on lasagna nor pizza.

Depending on what’s in the fridge, Parmesan, Gran Padano or Pecorino and some mozzarella.

We never have fewer than 6 types of cheese in the fridge because cheese is the best food.

I don't like mozzerella in lasange as I prefer it to cut neatly, the cheese pull is fine for pizza but not lasange imo.

Surely she means mozzarella not buffalo mozzarella though? Wouldn’t buffalo mozzarella go weird if it was cooked?

An authentic lasagne is made with béchamel sauce, no cheese topping at all. So mozzarella isn’t authentic either, but I suppose at least it’s Italian. Like all Italian cuisine, British versions are quite different, but at least a cheesy topped lasagne is tasty, unlike some of the bolognese abominations you hear about on here!

Yes, just bechamel sauce here. No cheese. I eat plenty of cheese elsewhere, so I like the absence of cheese in a lasagne.

Vintage Cheddar, lots of it, and make cheese sauce with Cheddar instead of Béchamel. My lasagne is fabulous and I’ve never had anyone not want seconds. I don’t care that it’s not authentic.
