What cheese do you use on your lasagna top?

Boring question alert 🚨

Had a 10 year old admonish me for using cheddar cheese last night! Her mother only uses buffalo mozzarella and Parmesan don’t you know.

I’ve always just used whatever cheddar we have knocking around as I really don’t like the after taste of Parmesan and find mozzarella bland. I know it’s not authentic

i think my lasagna is gorgeous.

I make the lasagne with a cheese sauce, not plain bechamel, and then sprinkle cheddar on top. Maybe Parmesan if I have it.

I also am not aiming for it to be "authentic". I'm not running an Italian restaurant. I'm cooking food I enjoy.

I use parmesan and cheddar.
My Italian friends do similar although they admit that is normt entirely traditional to do so. The more cheese the better.

Don’t all come at me but I’ve just made lasagne for dinner later with penne layers instead of lasagne sheets.

I find it holds the white sauce better 🤷🏻‍♀️😂

I also use whatever cheese needs using which today happens to be Red Leicester and cheddar but I do like mozerella and fresh basil on top.

Same. Food evolves all the time. The need to be 100 % authentic is boring.

In ideal world I’d use a mix of mozzarella, cheddar and Parmesan, but generally I just use whatever cheese I happen to have in the fridge.

I'm making a large lasagne next week and never thought to use penne.

I'm going to make a small single portion and try it!

Cheddar. I did try mozzarella once as well but that didn’t go down especially well.

However, I rarely make it now. It seems such an effort!

The best lasagne I have ever had is the Mary Berry one (made by me 😂).

Authentic Italian lasagne do not contain mozzarella.

I think it's fine to cook meals to your own taste and not be authentic. I do the same as you. It's not like an Italian person is going to be standing there with a clipboard and have you arrested if it's not exactly how they make it.

Lots of whatever is in the fridge. So usually cheddar or red Leicester. Might not be right, but it's always yummy.

Ricotta layered inside (no need to faff making bechamel or cheese sauce) then grated cheddar on top. I am no Mary Berry but there are never leftovers.

Cheddar. Love cheddar! Don't like parmesan, ricotta or mozzarella. I know it's not authentic but it is delicious.

And to answer your question - parmesan in the bechamel sauce, torn mozzarella on top and grated parmesan added on top near the end.

I don’t use bechamel or cheese sauce (taught my my southern Italian ex mil) I top with mozzarella (not buffalo) and Parmesan shavings. If meat sauce also sprinkle at small amount of chopped boiled egg.

I don't put cheese on top of lasagne, just make sure it's covered with bechamel.
If you like cheddar use it, who cares what other folk use - they're not more correct than you!

Fresh parmesan only. Cheddar cheese has no place in a lasagna.

There are so so many different versions of lasagne.

That said too much cheddar can make dishes salty. I put some in the white sauce but not cheddar on top as well. Normally mozarealla or provolone if it's Italian week at Lidl as I don't see that cheese otherwise.

I agree, cheddar can make it salty. I always use provolone piccante (lived in Naples for ages). I either buy mine at Lidl like you or from our lovely local Italian deli.
