Just back from weekend away. Supermarket shutting soon. I've no desire to cook but have to as we've had way too much take out this weekend.
I'm veggie, DH and kids aren't so could do with something adaptable or so easy I can do two versions. I'm craving lasagne but they don't want that. DH will eat veg with me. Kids would like something beige.
I usually do fajitas or burritos or roast on Sunday. I'm so tired but we need to eat.
Tell me what you're having or what I can buy that's easy? Thanking you!

Pasta Al forno for us. Nice and easy but sadly too close to lasagne to be helpful to you, sorry.

I'm just deciding whether I'm going to bake a cake or make a trifle. Could eat both but can't be bothered to make two!

I'm literally boiling some spaghetti, grating some cheese. Making meatballs from minced beef and baking tomatoes, onion, garlic, red pepper and feta to create my sauce.

So essentially spaghetti and meatballs!

In your situation I'd do something easy like jacket spuds with various toppings if you can be arsed. Or just beans and cheese.

Personally I'm having Pad Thai as I'm the opposite and I've cooked relatively healthy dinners this weekend.

Cottage pie, broccoli, carrots and cauliflower.

I did a batch cook yesterday of the base, so have 3 more family meal size portions in the freezer.

Sweet and sour chicken, Hairy Bikers. It's delicious.

We had their halloumi burgers for tea last night, also really good. (The one in their everyday winners book.)

@abblie it's tempting to do that here too 🤣. I'd love veggie lasagne but oh the faff of making a meat and a veggie...not happening today ! I'm stacking these up for the week though for another meal plan

I'm doing bubble and squeak in the oven, with chopped up bacon mixed in.

Takes a while but fairly hands off.

The kids are having meatballs that i have defrosted from batch cooking. I'm having salad and omelette. I really can't bebothered either!

We usually have a roast of some sort on a Sunday but today is the last day of dds 18th birthday celebrations and she has requested chicken fajitas. Not very exciting really but one of her favourites!

Grate up some potato and zucchini. Add chopped bacon (or not). Some seasoning, chives if you have them. A bit of flour, eggs. Fry up some fritters and serve with tomato sauce. Side salad optional. My kids love them. I’m not sure they cover all nutrition bases but on Sunday nights all bets are off.

Gnocchi bake with spinach, pancetta and philly. Takes about 20 mins. We only got back yesterday so its a cupboard/fridge raid as I'm feeling lazy today.

a store cupboard curry. We are in the same situation, just back home from ten days away and I can’t face either takeaway or cooking anything complicated. Chickpeas / spices / tomato and spinach (always have frozen) sauce. Coconut / lemon rice.
