Just back from weekend away. Supermarket shutting soon. I've no desire to cook but have to as we've had way too much take out this weekend.
I'm veggie, DH and kids aren't so could do with something adaptable or so easy I can do two versions. I'm craving lasagne but they don't want that. DH will eat veg with me. Kids would like something beige.
I usually do fajitas or burritos or roast on Sunday. I'm so tired but we need to eat.
Tell me what you're having or what I can buy that's easy? Thanking you!

Hubby is in charge of dinner tonight so we're having enchiladas

ODFOx · 05/06/2022 15:25

Pop to shop for buns and burgers. Chicken for kids, veggie for you. Stacked up with loads of salad and tomatoes and salsa, served with frozen potato wedges.
25 minutes from start to finish with no effort other than a bit of slicing. (We had this last night)

We're having a roast today so no use to you as inspiration I'm afraid.

StarTwins · 05/06/2022 15:26

Homemade cheese and onion quiche, salad and spicy chicken wings for the boy.

If I can't be bothered to cook, I tend to get something out of the freezer.

If I can't be bothered with that, beans on toast is always a good option. Wink

Crocsandshocks · 05/06/2022 15:27

Fish pie so not veggie but using up what I have

soupmaker · 05/06/2022 15:29

We're not long back from 3 days away. I got a spatchcock chicken, salad, humous, and Greek flatbreads for tea. I'll do a big Greek salad for the non-meat eaters in my house. Will take 10 minutes to prepare.

KathieFerrars · 05/06/2022 15:31

Boil pasta. Separate pans put in half and half passata. One pan gently heat it up with tin of tuna. Other pan, chop veggies in (you could saute them first. Sauce over pasta, loads of cheese. Takes 15 mins no faff.

We normally eat at lunchtime.
However, if I need to serve up a light supper it would be toast hawaii (posh cheese on toast).
Toasted sourdough, spread with mustard and butter, slice of good ham, slice of fresh pineapple topped by a slice of tasty cheese and grilled until bubbling. Served with a green salad with lots of fresh herbs and possibly a tomato and spring onion salad. No pudding (it is actually quite filling) but fruit for those still needing something to crunch on.

RedorangeyellowBLACK · 05/06/2022 15:33

I cba today either as not feeling great. I made a quick veggie sauce earlier, just fried off leeks, garlic, tomatoes and peppers with passata, blended then stuck it in the fridge. Will add in some creme fraiche and stick in cooked pasta, throw on some grated cheese and the family can have that with garlic bread. My IBS is playing up so I’ll have some plain boiled rice - yum 🙁

RedorangeyellowBLACK · 05/06/2022 15:34

FelicityFlops that sounds fab.

TheHumanSatsuma · 05/06/2022 15:37

Chicken stew, cooked in white wine and herbs. Green beans.
Cheese and cherries

axolotlfloof · 05/06/2022 15:39

Roasted tomato Orzo (I am sure you can use any pasta) . With garlic bread and salad.

PurpleDaisies · 05/06/2022 15:42

Lentil pasta cheat bolognese. I used batch cooked French braised lentils from the freezer but the packet puy ones also work well. Just heat them up with passata, fresh herbs, balsamic vinegar and any extra veg you fancy (we had mushrooms today) or a jar or sauce. Cook pasta and garlic bread. Super easy but tastes great.

We're having toad in the hole - easy enough to do a small one with veggie sausages on the side, and not much effort to do the batter?

SunnyLobelia · 05/06/2022 15:48

We are just having coronation chicken rolls with ham and cheese rolls for the DCs and some salad bits on the side. (IAlso back from holidays today)

NeverDropYourMooncup · 05/06/2022 15:48

Buy a microwave vegetarian lasagne + salad bag, do nuggets and chips for the kids.

You'll be sitting down with a cup of tea within half an hour.

We are having meat and potato pie. You could swap the mince for quorn/lentils or something.

Favouritefruits · 05/06/2022 15:56

Just been to the Chinese supermarket and bought Chinese pancakes, hoisin and plum sauce so think I’ll cook a chicken and make crispy chicken and pancakes with cucumber.

Bloodybridget · 05/06/2022 16:03

Cauliflower and chickpea curry (using a spice paste pot), beetroot curry, brown rice, nan. Beetroot dish an extra as we now have two supper guests.
If I needed to do a very quick meal: pasta with anchovies and broccoli, stirfried veg and noodles with salmon fillets, macaroni cheese . . Depends what's available!

Gnocchi bake with spinach, pancetta and philly. Takes about 20 mins. We only got back yesterday so its a cupboard/fridge raid as I'm feeling lazy today.

Have you got a recipe please ?

Grumpybutfunny · 05/06/2022 16:05

Husband has got the beef out to make Korean fried rice but I cba. Might chuck a pasta bake in the oven and have the beef tomorrow

anyoldname76 · 05/06/2022 16:08

No help really but we're having a chicken dinner. One of my favourite fast meals though is a mayflower curry, stir fry a load of veg, and add the sauce , serve with rice and whatever bread you've got in. If I've got leftover meat from the day before I chuck that in too otherwise we just have it veggie
