Just back from weekend away. Supermarket shutting soon. I've no desire to cook but have to as we've had way too much take out this weekend.
I'm veggie, DH and kids aren't so could do with something adaptable or so easy I can do two versions. I'm craving lasagne but they don't want that. DH will eat veg with me. Kids would like something beige.
I usually do fajitas or burritos or roast on Sunday. I'm so tired but we need to eat.
Tell me what you're having or what I can buy that's easy? Thanking you!

Spaghetti aglio e olio , very simple!! Spaghetti with garlic, olive oil, chilli and chopped parsley.

Vegetable and prawn red Thai curry, could work for your family as the prawns go in for the last few minutes so you could take yours out then add prawns for the meat eaters

Going to have to go mAke notes now as there's some lovely food ideas. DH has declared take out which I'm wincing at but I had bought salmon (plus veggie sausage for me) with baby roasting potatoes and peas that we'll have tomorrow now!

@UnshakenNeedsStirring also sounds great. I've changed all the beds and done laundry and washed the dog too (in the bath not the machine don't worry ) but now v tired but tempted to start another thread called AIBU to ask what the heck is up with my ankle. No accident/ injury that I remember other than stepping a bit hard on a sticky up rock but it's killing me (dramatic me? Never )
I've taken photos and everything but feet aren't as popular as parking ...

@polkadotpup , cook shop bought gnocchi, for I am lazy, in boiling water and drain . In the meantime, fry pancetta, and spinach to wilt with a lid on the pan, when wilted stir in a tub of philadelphia, and some black pepper until melted. Add a bit of grated parmesan and stir. Add the gnocchi into the pan for a couple of mins. Tip into an oven proof dish, add parmesan on the top and grill until Bubbling, about 5 mins if that. Easy amd tasty.

In minimal effort terms, I also love Nigella's chicken and chorizo, new potato amd red onion tray bake. Takes an hour in the oven, but less than 5 mins prep, so you can do other stuff, easily googlable and a staple in our house.

I do a very similar gnocchi thing but with chorizo and cherry tomatoes instead of pancetta, and I don’t do it under the grill - just add a wee bit of the gnocchi water to loosen up the Philadelphia.

I hope.your ankle is ok. I have mild post holiday sunburn, and a massive bruise from an ill advised waltzer trip, but the ankle sounds worse.

@murasaki sounds delicious and also possible to split into two dishes one with veggie sausage and one with chorizo. Do you buy the cooked chorizo or slices or what? I rarely cook with it but assume chunks from a sausage would be better here?

We had tortellini with wild mushroom, tarragon, white wine and cream sauce with salad 😋 So easy to make.
