New year new ideas please!

Ours had got to the stage of something like this...:

  1. burger and chips
  2. pork loin steaks veg and potatoes
  3. sausage, mash, peas and gravy
  4. curry and rice
  5. pizza and chips
  6. take away or eat out
  7. roast

I need to mix it up, eat less meat and more veg.

Would you mind sharing what an average week of dinners may look like to you?

Meals this week

Pizza, home made wedges, coleslaw and salad
Baked potato and left over veggie chili
Pork steaks with braised leeks, tarragon and new potatoes (I'll have a veggie grill thing)
Mozarella and tomato risotto
Spaghetti and meatballs/veggie meatballs
Home made Nandos night: chicken or quorn fillet marinaded with pitta, salad, mexican rice and chips. Will try some macho peas if I can find a recipe
Pie, mash and veg
Veggie chili and tacos

Mon: lentil shepherds pie, cabbage & peas
Tues: rice bowl with greens, tofu and tahini dressing
Wed: rest of the shepherds pie
Thurs: cauli tagine & couscous
Fri: stir fry

4.bulgar wheat salad with crispy tofu
5.beyond burger with chips & salad
6.bulgar wheat or rice stir fry whatever is in the fridge with mushrooms spinach tofu onion peas pepper basically any veg in the fridge it's a use up day Grin

Sunday = roast
Monday = rice or noodle meal (e.g stir fry)
Tues = leftovers (usually from the roast- we leave it till Tuesday as it’s a night when we aren’t all home)
Wed = oven meal (e.g burgers)
Thurs = pasta or potato meal (e.g bolognaise / sausage & mash)
Fri = pizza night
Sat = something vegetarian (casserole, curry, pasta etc)
Additional stuff we might have = chilli, jackets, fajitas, pie.
I find it much easier to plan around this structure. Generally I have about 4 different options I can cook for whatever day.
One of us is full time veggie, so a lot of our meals are, but I find it helps us to try new things to have one dedicated veggie night.

Monday: omelettes with green beans, salad and garlic bread

Tuesday: home-made pizza and salad

Wednesday: turkey escalopes with roast veg

Thursday: Moroccan fish stew

Friday: tofu stir fry

Saturday: fish cakes from the freezer with carrots and broccoli

Sunday: fish pie

This is my meal plan for this week. Four of us, two adults and two primary aged kids. Eat chicken and fish but no red meat.

Mon: roasted vegetable lasagne
Tues: mushroom stroganoff and mash
Weds: chicken casserole
Thurs: jacket potatoes and tuna mayo with salad
Fri: Tomato, avacado, basil and mozzarella salad with nice bread and olives
Sat: takeaway
Sun: tofu Thai green curry and coconut rice

A typical week here:

Monday - macaroni cheese or tuna pasta bake
Tuesday - stir fry and noodles
Wednesday - fish cakes and veg
Thursday - freezer bingo/pizza/jacket potatoes (we are all in & out)
Friday - takeaway
Saturday - grill and chips (steak/pork/peri chicken)
Sunday - roast or a stew or sausage and mash

The weekly pattern is:

Monday: eggs

Tuesday: pizza night

Wednesday: bulk cooking for dinner and the freezer

Thursday: fish

Friday: tray bake/stir-fry

Saturday: something from the freezer

Sunday: something taking a bit more effort - red meat, pie of some sort, slow-cooked stew. There might be wine or pudding.

We cook this every 2 weeks , Shepherds pie , Fish with parsley sauce, Egg gammon and chips , Gammon and parsley sauce, roast beef dinner , roast pork dinner, sausages and mash, Beef stew in the slo cooker, Fish pie , Pasta Bolognaise , Chilli con carne, Chicken curry , Pie and chips or pie mash and gravy . Chicken stir fry , Fry up , all with accompaning veggies and gravy It's on a loop really Smile

Linda McCartney vegetarian meatballs, tomato and chilli sauce and tagliatelle (I'm not a vegetarian, but these are great!)

Marinated chilli beef strips from asda and rice in a giant wrap with some toppings of choice

Monday - one pot slightly spicy chicken and rice made with leftover chicken
Tuesday - fishfinger sandwiches and carrot sticks (kids go out to kickboxing so it has to be something quick and light)
Wednesday - roast veg pasta (v)
Thursday - coconut lentil dhal and rice (v)
Friday- pizzas and crudités (v)
Saturday - sausages and homemade potato wedges

We try to have 2-3 veggie or vegan days a week

Monday - meat leftovers in a dish such as egg fried rice, risotto, curry, pasta dish, sloppy Joes, meat+gravy+stuffing in bagettes
Tuesday- jacket potato with various toppings or leftovers from the freezer
Wednesday spaghetti Bolognese (meat or meat free)
Thursday- chilli made from left over spag bol with added beans and chick peas
Friday- pizza
Saturday - steak, sweet potatoes and veg

Have also started cooking this recently and it’s bloody glorious! I slow cook the filling and then add the sweet potato topping once in a pie dish and Chuck it in the oven.

Rough plan for this week:

Chicken curry and rice with added broccoli, green beans and mushrooms
Spaghetti bolognaise with added lentils
Fish pie, green beans, cabbage and peas
3 bean chilli with whatever veg needs using up
Salmon roasted with broccoli, beans, asparagus and tomatoes with rice
Burger, chips and salad
Roast meat and veg etc

Some great ideas here. For additional vegetable rich meals suggest:

  1. Spaghetti or penne arribiata with peas
  2. Pizza with mushrooms, onions and sliced peppers and a green salad
  3. Cauliflower cheese with green beans, toasted almonds and steamed broccoli
  4. Seared tuna or salmon steaks with oven roasted Mediterranean veg mix.
  5. Prawns in coconut milk and sweet chilli with rice noodles
  6. Garlic chicken pie.
Stir fry chicken, mushroom, onions and frozen peas. Make twice as much as you need. Put half in fridge. Add salt, pepper and a couple of tablespoons of sour cream to remaining mixture. Put in oven proof dish and top with garlic bread slices. . Bake for about 10 mins. Serve with green salad
  1. Use left over chicken mixture in omelettes.
