New year new ideas please!

Ours had got to the stage of something like this...:

  1. burger and chips
  2. pork loin steaks veg and potatoes
  3. sausage, mash, peas and gravy
  4. curry and rice
  5. pizza and chips
  6. take away or eat out
  7. roast

I need to mix it up, eat less meat and more veg.

Would you mind sharing what an average week of dinners may look like to you?

I don't do a week rotation as I generally cook a pot for a few nights at a time. I rotate between tomato based curries, coconut milk based curries, chilli, bolognaise and vegetable soup. All have plenty of vegetables included.

Aubergine arrabbiata
Roast squash with lentils and halloumi
Faro, squash and borlotti bean soup
(Veggie) Sausage and pepper casserole with mash
Yaki udon

We just did the meal plan - two adults, no kids here.

W - pea and pancetta risotto

Pulled pork roast dinner
Bubble and squeak with fried eggs and beans (using leftover veg from Sunday roast)
Pulled pork and stuffing baguettes (using leftover pork and stuffing)
Carrot and coriander soup with cheese on toast
Lasagne (from freezer - made last week) with mangetout
Home made Big Macs and salad
Enchiladas

Typical week:

Sunday - roast
Monday - leftovers with a jacket spud
Tuesday - Pasta with mushrooms and leeks with walnuts/blue cheese
Wednesday - Salmon with rice and broccoli
Thursday - smoked mackerel with couscous and veg
Friday - tofu or prawn stir fry (or take away)
Saturday - Roasted veg with feta or halloumi and couscous

My dd became pescatarian a couple days of years ago which has been instrumental in us all eating less meat. We also like tacos, tuna bake, a yotam ottolenghi lentil dish, and fish cakes (not home made!).

  4. Spag bol or other tomato based pasta dish
  5. Takeaway
  6. Something with chips, chops, sausages, garlic chicken or baked salmon
  7. Lamb or chicken curry/rice or Moroccan dish with couscous.

Other weeks, macaroni cheese, chow mein, carbonara with bacon or smoked salmon trimmings, quesadillas, Diet Coke chicken, tuna pasta bake, enchiladas, chicken and egg fried rice, keema curry.

Always pizza on Wed and takeaway Friday. Smile

  3. Piri Piri salmon with mango salsa
  4. Risotto (chorizo for DP, lemon for me)
  5. Fusilli pasta with mushrooms and garlic cream tarragon sauce
  6. Jerk chicken with rice and peppers
  7. Haddock with lemon couscous and green beans

Trying to wean myself of pork shoulder steaks and red meat and eat more fish.

Chilli pork noodle soup with green and red peppers, baby sweet corn, courgette and spring onion

Duck in hoi sin sauce with rice and green and red peppers, water chestnuts, shredded cabbage, pack Choi and spending onions

Roast gammon with baked potatoes, carrots, peas, cabbage and cheese sauce

Pizza, I buy ready made bases and just throw on what’s in the fridge, home made potato salad and salad

Sweet chilli tofu with whatever veg is left in the fridge and rice, clear vegetable broth with ginger and spring onion

Steamed cabbage rolls stuffed with minced pork, water chestnuts and ginger, rice and a veg and noodle soup.

I'd remove either the burger and chips or pizza as these are basically junk foods and one junk food night is enough in a week.

Then replace the chips with vegetables and salad. Potatoes don't really count, you want loads of leafy greens and an assortment of colours - spinach, kale, Pak Choi, carrots, peas, beans, sweetcorn ... make vegetables the bulk of your meal. Meat portions should be no bigger than the palm of your hand.

Thanks for the beanburger recipe, that looks good, lots of variations in the comments on that site too. I've not had success with homemade bean burgers yet.

Here is the meal plan I wrote for this week:

Mon - veg stir fry (red cabbage and carrot) on rice with kidney beans
Tues - sausages with roast red cabbage, carrot, leeks and gravy
Weds - chicken and salad wraps
Thurs - pumpkin soup
Fri - fish cakes or something fish based, with salad and boiled potatoes
Sat - at a friend's
Sun - lentil experiment! (Or even pizza if it all goes to hell Grin)

Not a typical week as we are using up some veg before a shop.

Other regular easy midweek meals in this house include:
Cauliflower, broccoli and macaroni cheese
Pasta parcels with peas, green beans, olives and pesto
Spaghetti bolognese one day, then add kidney beans and chilli powder and serve next day as as chilli!
Stew one day that gains a pastry lid on day 2 and then is a pie.

Easiest ways I have found to get more veg in are - do roast veg without potatoes. If you're having pasta, substitute at least half pasta for veg. With rice, I cook it with loads of that frozen veg mix in it. I try to limit meat to a couple times a week, fish once or twice, some days veggie!

Pasta meal eg puttanesca or Norma
Fish fried in pan eg sole with boiled potatoes and spinach or similar
Pizza or steak or burgers or a takeaway ie something a bit treaty.

It's not bad to be fair. If these are all things that the whole family likes you can ring the changes week on week for each dish: Beef burgers can be exchanged with spicy bean burgers or marinated chicken breast or pulled pork or pork and apple burgers. Dirty them up with lots of yummy toppings; sliced peppers, tomatoes and onions. Swap chips for sweet potato fries or wedges or a grain based salad. A meat curry can become a thali of three different veggie ones plus rice and Nan and salad: a great excuse to eat as a family too. Most veg curries freeze well so you can box up half of each and have a meal for another day with next to no effort. And swap one of your pork and potato dinners for one of the fab Chinese or Thai dishes posted by pp!

  • Carbonara or Amatriciana
  • Chicken breast in some spice rub or other with corn on the cob, broccoli/French beans/mangetout & homemade "oven chips"
  • Chicken Casserole with rice & veg
  • On Toast Night or Jackets with beans / cheese
  • Roast chicken / pork or coq au vin or boeuf bourgignon with mashed potatoes & 2 veg
  • Fish baked in tomatoes with salad & baby new potatoes

We're vegetarian:
M: Mediterranean veg in a tomato sauce, crunchy chickpeas and halloumi.
T: Veggie sausages, sachet of cous cous (We like Ainsley Harriet ones) and veg.
W: Breakfast casserole with fried eggs.
T: Mushroom risotto.
F: Homemade soup (whatever's in the freezer) and cheese toasties
S: Takeaway
S: Usually a roast dinner with cauliflower cheese instead of meat.

Might swap the risotto out for a tofu stir fry if no one eats the tofu for breakfast/lunch.

This week:

  2. Grilled burger, no bun, savoury rice and peas
  3. Homemade fish pie
  4. Chicken and veg casserole
  5. Lunch out, so snack such as soup or sardines on toast
  6. Sausages and jacket potatoes plus veg
  7. Bolognese in slow cooker (make double and freeze half)

Other staples are prawn or chicken curry with noodles, mushrooms and spinach, homemade salmon fish cakes with veg, Quiche salad, white fish in parsley sauce with mash and veg or chicken, mushroom, peas and bacon bits in mushroom sauce with rice. I also make a huge pan of stuff: pepper, courgette, chick peas, onion, garlic, chilli, spinach, mushroom and tinned tomatoes and freeze it in portions as it makes such a good base for pasta sauce- just add tuna or ham- or a veggie curry- just add potato and carrot plus curry powder.

  1. One pan Thai green salmon curry (BBC recipe) and noodles
  2. Pasta with a homemade vegetable sauce
  3. Chicken fajitas
  4. Cottage pie
  5. white fish with stir fried veg and rice or noodles
  6. jacket potatoes and toppings
  7. Another veggie dish of some kind eg pasta or stir fry

Also in a bit of a rut so trying to change it up a bit this year!

I want to come for dinner this sounds great
