So, I've done it for a few years... make and freeze the yorkshires, roast tats, roast parsnips, carrot and swede mash, braised red cabbage etc. a few weeks before xmas.

Today I got a lidl waste not box and it had carrots, swede and red cabbage in... I've made my first bit of xmas dinner on THE FOURTH OF SEPTEMBER!!! (carrot and swede mash btw... braised red cabbage'll be tomorrow 🤷🏻‍♀️).

I'm feeling a tad unreasonable!

I’m impressed with your forward planning (in awe of it actually). But yep, YABU

DappledThings · 05/09/2021 00:16

You freeze roast potatoes? They can't come out well.

621CustardCream438 · 05/09/2021 00:19

You must have a massive freezer to be able to dedicate space to stuff you won’t use for three and a half months! I’d have just made a roast dinner in September and bought another swede etc in December, but each to their own.

YABVU to mention the C-word already! I bet you put your tree up on the 9th of November and then post photos of it on Facebook "because I just can't wait!"

Par boil them, roast them in like goose fat or something until they're not quite as crispy as you want then, freeze them, pop them in the oven for a bit on 'the big day' and they're fab!

I do this and have some of it in my freezer already as well!

Yah, nope 🤣. Quite normal when it comes to tree up (is 1st of dec normal?! 🤔)

I do that with roasties too (though not on 4/9!) and they come out really well.

Topseyt · 05/09/2021 00:34

I haven't even thought about Christmas much yet.

We usually go to a local restaurant 10 minutes walk away from our house. I suppose we will have to book that this month to ensure we will get in, but that will be it. Nothing more until around the start of December.

About the roast potatoes - do you cook them on the day from frozen or defrost them first?

Topseyt · 05/09/2021 00:37

Yes, they can. That is why you can buy frozen roast potatoes. Auntie Bessie, supermarket home brand etc. They are fine. 😎
gogohm · 05/09/2021 00:38

I don't usually know how many I'm feeding or if I'm even at home until a few days out! If easy to cook on the day anyway, seems way too much faff to cook and freeze!

Everything comes out the freezer and put in the fridge the day before (shoved in whatever space is left 😬).

I've still got red cabbage for twelve in my freezer from Christmas 2020 - didn't make sense to defrost it when we suddenly went from hosting all the in-laws to being our household only!

Still. That's one job ticked off for this year 😁

Woah! Soooo much less faff to cook and freeze beforehand! Less washing up, less hassle! There might be the 4 of us, there might be 6, there might be 8... not sure til nearer the time! We're covered for all eventualities 😀

I'm running my freezer down at the moment. Then defrost and I'll be doing the same as you

Lots of food waste veg around at the moment that can be prepped and frozen

Monr0e · 05/09/2021 00:46

Never mind Christmas dinner (best meal of the year), what's a Lidl waste not box and how do you get one?

Classica · 05/09/2021 00:47

You are a crazy lady. Cooking veg and freezing it months in advance of Christmas?! I mean maybe if you're cooking xmas dinner for 30 people a bit of pre-cooking it the sensible thing to do. Are you cooking for 30 people, OP?? I refuse to believe par-boiled and frozen potatoes roast well. So I'll have to test it out!

I did laugh at your 'I'm feeling a tad unreasonable'. NO ONE EVER SAY THAT! Grin

Roast potatoes taste better when they have been cooked twice, my mum saves all the leftover ones from Sunday dinners if she can get them before ds disappears in the kitchen to finish them off & fills a bag for Christmas Dinner.

Ooh, get yourself down to lidl as soon as you can on a morning (i mean not necessarily opening time, we got there at 10.30am today). They do boxes of fruit and veg that is slightly not it's best. You get a crate for £1.50!!! It's absolutely brilliant, so much stuff to use and freeze!

Hmmm maybe a little crazy 🤣 defo not cooking for 30. It's between 4 and 8 😂. I like to spend more time with my kids on xmas day than on my own in the kitchen. If I get bargain reductions in the shops to cook and freeze beforehand then all the better!

How many will you be feeding that it requires this level of preparation?
