What were your weeknight dinners this week?

I like to hear what other (real) people eat for dinner over the course of a week, it helps me with meal planning a lot. We've been in a massive rut lately so I'm pretty desperate for some inspiration from anywhere other than the unrealistic "weeks of dinners" you see when you search youtube!

I'll go first:
Mon - Salmon with soy sauce, ginger and garlic, rice with leeks, broccoli
Tues - Chicken, spinach and chickpea curry with rice
Weds - Leftover curry
Thur - Pasta w/ prawns and chorizo tomato sauce
Fri - Pizza (previously homemade dough that had been frozen), sweet potato paprika wedges and corn on the cob

I'd live to hear more about the veggie rice all in one and the burrito?

Someone mentioned spicy rice as well.

We love rice. We always make lemon ginger and Turmeric for freezer curries, always looking to expand

-Hairy bikers chilli salad bowls

-Salmon stir fry with vege fried rice

Home made chicken chow mein
Home made spaghetti bolognaise
Minted lamb chops with roasted peppers and new potatoes
Marinated Marsala chicken with mint yoghurt sauce and chunky chips
Sweet potatoes stuffed with bacon , cheese abs sprinkle of spring onions

Monday - fishcakes with a poached egg on top, spinach, skinny fries
Tuesday - steak and salad
Wednesday- leftover homemade jambalaya
Thursday - homemade burgers and chicken wings
Friday - fish tacos

Monday: chicken korma made from scratch (dead complicated with cashew nut and white poppyseed paste and stuff - worked hard on it, good result!), white rice
Tuesday: chicken and prawn jambalaya
Wednesday: pork with homey and 5-spice, sweet 'n sour sauce, noodles
Thursday: kedgeree with smoked cod, salmon and prawns
Friday: (pub night for DH) cheese on toast for him, tarka dal for me

I do cook from scratch but that’s because I’m at home, don’t have children/teenagers to think about, look after and/or ferry about. Also both my husband and I really enjoy cooking. We can cook most things from scratch for less money and to taste better than getting it readymade, so it doesn’t really make sense not to do so since we have the time and inclination. We’d have a takeaway more often if there were any nice ones around but sadly there really aren’t.

When my children were little and I was a single working mother I used jars and premade things much more often just to save on time and effort.

Love these threads - tho my week looks dull compared to others on here
I'm feeding six

Monday- steak , New pots, mushrooms and peas
Tuesday- pizza pasta and garlic bread
Weds - roast
Thursday left over roast chicken with salad /rice
Fridays are my lazy days i let the kids have free choice and normally they either choose ready meals or a takeaway

Dh will normally have an extra dinner later on of eggs on toast or eggs and chips - im not entirely sure where he puts it 🤔 he is an eating machine

Mon - Lamb meatballs with gravy, mash and veg
Tues - Chicken Kebabs with pilaf
Wed - Teriaki Salmon and prawns with bulgar wheat and red onion
Thurs - Spicy beef meatball curry with Potato rosti
Friday - Chicken strips with chips and beans

This week was
Mon: spag Bol
Tues: jacket pot, cheese and beans
Wed: roast chicken with salad and roast sweet potato
Thurs: cheese and broccoli pasta bake with veg
Fri: fish and chips

Having salmon and pea risotto with veg today and roast pork dinner tomorrow

Plan for next week is:
Mon: tempura chicken, fries, mozzarella sticks and baked beans
Tues: gammon with mash and veg
Wed: minted lamb kebabs with salad
Thurs: smoked fish with roast new potatoes and veg
Fri: chicken curry with rice

Here’s my tentative menu starting tomorrow/next week:

Sunday: roast dinner if we fancy it, or a lamb and sweet potato curry.

Monday: chicken, chorizo, spinach and butter bean stew with focaccia on the side.

Tuesday: pork chops, mash, carrots, peas & sprouts

Wednesday: chilli and rice with pico de gallo

Thursday: Spaghetti and meatballs

Friday: DH’s homemade ciabatta, had with garlic sausage and creamy blue cheese, olives and cherry tomatoes. And🍷🍷

Saturday: Pork gyoza with dipping sauce, noodle stir fry with carrot, cabbage and broccoli

Sunday, a roast, if we don’t have one this week (if it’s still cold with manky weather! - if it’s nice we’ll adjust it to something more summery)

We largely cook from scratch, but do keep frozen potato wedges, frozen sweetcorn, and frozen onion rings. Plus quorn meat things my husband likes. We always keep a couple of frozen cheese rolls for emergency last minute veggie burger dinners (aka yellow dinners) . We also buy pukka pies we have with chips and frozen sweetcorn sometimes, we just didn't have this week. A lot of our dinners fall to my husband as I've really bad health but I do dinner prep in stages, and this is why the freezer is instrumental.
I can take 2 days (in stages of prep) to cook a 6/7 portion batch of curry but it all adds up to the big drawer full of different curries/chilli/sausage casserole /pasta sauces etc. Sourdough pizza gets frozen as well so it's all part of the bigger picture.

My mental health has been all over the place this week so my eating has been pretty up and down.

Mon - Was at A&E so just had a bag of crisps from the vending machine
Tues - leftover takeaway curry (frozen weeks ago) & microwave rice
Weds - veggie sausages x 2 in bagel with roasted pepper & tomatoes
Thurs - potato waffles, quorn nuggets, peas & sweetcorn
Fri - portion of chips from the pub

There's just me and DP so during the week I only cook every second night and the other nights we have leftovers.
Mon & Tues: Baked broccoli mac and cheese.
Weds & Thurs: Burrito bowls
Friday: Takeaway sushi

Pasta with peas and pesto, salad
Braised chicken (lemon & garlic sauce in slow cooker), carrots and mashed potato
BBQ bacon chicken (also in slow cooker), broccoli
Grilled pesto marinated chicken & sweetcorn
Burgers (picked up from local restaurant, was too busy to cook.)

Tonight I'm making minestrone. Then at some stage I'll meal plan a bit for next week.

Oh I love a good old food thread.

Monday: Beef Strognaoff with wild rice
Tuesday: Breaded cod, potato wedges and beans
Wednesday: Salmon and prawn stir fry
Thursday: Spaghetti bolognese
Friday: Rib eye steaks, chips, garlic bread, onion rings and salad
Today: Thai red chicken curry
Sunday: Roast pork with all the trimmings

Pretty typical for us, we normally have a treat dinner on a Friday night with some wine.
