What were your weeknight dinners this week?

I like to hear what other (real) people eat for dinner over the course of a week, it helps me with meal planning a lot. We've been in a massive rut lately so I'm pretty desperate for some inspiration from anywhere other than the unrealistic "weeks of dinners" you see when you search youtube!

I'll go first:
Mon - Salmon with soy sauce, ginger and garlic, rice with leeks, broccoli
Tues - Chicken, spinach and chickpea curry with rice
Weds - Leftover curry
Thur - Pasta w/ prawns and chorizo tomato sauce
Fri - Pizza (previously homemade dough that had been frozen), sweet potato paprika wedges and corn on the cob

Monday - spaghetti and meatballs
Tuesday - Chicken casserole with copious amounts of vege
Wednesday - Tastes like Honey (a Chinese Lamb and vege stirfry on udon noodles)
Thursday - oven baked salmon with veges
Friday - Takeout.

No idea what day we had each meal, but this week we've had:

Anjum Anand's chickpea burgers and rainbow coleslaw twice

Roast shallot, chickpea and feta salad

Tomatoes roasted with garlic, plus bought dips: tzatziki, hummus, fromage blanc and shallot/chives, and bread.

A bought pizza

Greek stuffed tomatoes

Monday pork loin steaks with potato dauphinois (home made using sweet potatoes) carrots and asparagus
Tuesday home made chicken burgers with vegetable rice
Wednesday sausage bacon egg beans and mushrooms
Thursday chicken breast with cauliflower and broccoli with a cheese sauce
Friday mixed fish and prawn risotto with leeks mushroom and mangetout
Tonight will be a gammon joint with butternut squash mash sprouts broccoli asparagus sugar snap peas asparagus and carrots
I’m dieting in case it wasn’t obvious!

Sweet and sour pork with coconut rice. Chicken tikka skewers in wraps with salad. Veggie burgers in a bun.

Tues. turkey bolognaise
Wed. Moroccan chicken casserole
Thurs remainder of Turkey bolognaise
Fri. Big plate of roasted veg with fried egg

Sun- slow cooked gammon, roasties, broccoli/carrots
Mon- macaroni cheese
Tue- stir fry chicken and noodles
Wed- spag bol
Thur- bbq so burgers, sausages, rolls, salad etc
Fri- chilli
Sat- not sure yet, probably pizza!

Monday- Fish Pie with peas and broccoli
Tuesday- sort yourself out night for older DC, younger DC have clubs they had pizza salad and coleslaw, I had leftover fish pie.
Wednesday- swimming night. DC1 usually cooks but was eating out and DH was home (he normally works away). He bought fish and chips.
Thursday- pasta bolognese with salad
Friday- steak cooked on the bbq in the rain! with courgette, broccoli, shelled broad beans, new potatoes, mint lemon and feta all sautéed together. Was delicious.
Saturday- burgers and coleslaw
Sunday- either roast chicken dinner or slow cooked gammon and macaroni cheese depending on our plans

From memory I think we had:

Roast chicken, salad and jacket potatoes.

Spag Bol.

Boiled gammon, cheese sauce, veg and potatoes.

Fish cakes, new potatoes and veg.

Chicken fajitas.

Is it bad I can’t remember this very well?!

Monday (cooked by me) Vietnamese steak salad with baguettes. My vegan son just had plant chef burgers to substitute for the steak.
Tuesday (H cooked) Mexican sausages with wraps, guacamole, salsa and sour cream. Son had the vegan elements and cooked himself something else on the side.
Wednesday I cooked lemon chicken pasta with salad (included vegan substitute)
Thursday husband worked late so we had a Charlie Bigham moussaka (ready meal) and salad.
Friday husband made shepherd's pie and greens.
Tonight I'm doing lamb (and veggie shwarma) with flatbreads, salad, hoummus etc.

I've been vegetarian for 30 years, but watched Vegucated last weekend so I think vegan is the way forward for me.
This week I have had:
Roast veg with vegan pesto
Mushroom burger
Tofu Buddha bowl X 2
Dhal (made weeks ago and frozen)
Tonight will be polenta and mushrooms

Monday - grilled halloumi salad with crunchy tortilla strips, salsa and avocado crema.

Tuesday - spaghetti with sauce of cherry tomatoes cooked in oil and white wine with lemon, basil, garlic and Parmesan

Wednesday - pomodoro soup with dollop of homemade pesto and cheese toasties

Thursday - veggie sausage toad in the hole with mash and peas

Friday - eggs florentine

Saturday - Nigella’s sesame peanut noodles

Sunday - leftovers / from the freezer

I’ve had that kind of week where I cannot keep any information in my head so I’m going to have to really try hard to remember, and I couldn’t tell you on which day we had what, either...

It’s been really cold here (in June 🙄) so we went back to quite a wintery menu.

Spicy crag end pie (lamb)
Roast pork loin with roast potatoes, stuffing, roast carrots & parsnips, & garlic sprouts
Spaghetti with ragu sauce
Smokey chilli and paprika chicken legs with potato & sweet potato wedges (plus ranch dip & salad)
Chanakhi (a Georgian stew with beef, tomato & aubergine)
Prawn and courgette linguine with chilli/garlic/basil
Tonight will be Chinese beef short ribs with jasmine rice & broccoli

don't remember the days of the week but this is what I can remember

-prawn, mixed vegetable and egg noodle teriyaki stir fry
-salmon, basmati rice and ratatouille
-chicken soup and oat cakes with butter
-turkey and ham baguette with peperoncini and salad

then for dessert chocolate trifle, ice cream, fruit, strawberry milkshake pop tarts (had a random craving!)

thinking about having chicken kebabs, rice and salad tonight

I work full time, so meal plan and make sure I have prepped meals for my busier days.
Mon - roast veg/Tom sauce/pasta - roasted the veg and made the tomato sauce on Sunday so I could throw it together on Monday night
Tues - veg frittata using leftover veg.
Wed -chicken curry - made a big batch at the weekend and put in freezer
Thurs - salmon/ braised green beans in a spicy tomato sauce/ potatoes
Fri - skillet lasagne.

I tend to shop first, and then meal plan - it is only for me, so not too hard to buy sensible meals.
Last week I had a couple of nights of M&S stir fry
Chicken with roast potatoes and steamed vegetables
Chicken with roasted vegetables
Sausages, mashed potato & steamed vegetables
Roasted beetroot, butternut squash with walnuts and feta
Waitrose courgette & radish slaw with shrimps

Trying to remember!!

Monday was pork shoulder steaks with a mustard cream sauce, butternut squash wedges and roasted broccoli.

Tuesday was beef chilli and cauli rice

Wednesday was jerk chicken thighs and salad

Thursday was a naughty Chinese takeaway

Last night we did hotdogs but I had a salad with spicy chicken wings instead.

Tonight is homemade burgers, thinking Turkey mince and Indian seasoning.

Tomorrow is either roast pork or chicken dinner, I'll decide which to take out of the freezer later :)

Monday was ready meals, I think. My mum got taken into hospital as an emergency, so I was at the hospital most of the day and food wasn't a priority.

Tuesday was salmon fillets with Jersey Royals and green veg.

Wednesday was chilli con carne with guacamole and rice.

Thursday was chicken curry and rice.

Friday, DH and DD had fish fillet, chips and peas, DS had tuna pasta, and I cobbled together something for myself which had courgetti, prawns, asparagus, a dollop of creme fraiche and some chilli and garlic.

This week, I have been mostly eating:

Roast chicken
Salad with chicken leftovers, parmesan shavings and balsamic dressing
Creamy chorizo and pea pasta
Gammon steaks with fried egg and salad
Confit duck (ready-to-cook thingy) and microwave rice
Frozen pizza and salad

Spaghetti Bolognese tonight, and probably pork loin steak, roast pots, veggies and alllllll the gravy the plate can hold for tomorrow.
