What were your weeknight dinners this week?

I like to hear what other (real) people eat for dinner over the course of a week, it helps me with meal planning a lot. We've been in a massive rut lately so I'm pretty desperate for some inspiration from anywhere other than the unrealistic "weeks of dinners" you see when you search youtube!

I'll go first:
Mon - Salmon with soy sauce, ginger and garlic, rice with leeks, broccoli
Tues - Chicken, spinach and chickpea curry with rice
Weds - Leftover curry
Thur - Pasta w/ prawns and chorizo tomato sauce
Fri - Pizza (previously homemade dough that had been frozen), sweet potato paprika wedges and corn on the cob

Monday- leftover roast chicken with air fried wedges and salad
Tuesday - green Thai curry
Weds- hoisin confit duck legs with chow mien oodon noodles
Thursday : spaghetti carbonara
Friday- big lunch out so bacon sandwiches for tea

Can't remember a full week!

Tonight was fujien noodles with sugar snaps, quorn chicken and an omelette rolled up and sliced, topped with salty sweet cashews.
Thursday was steak, homemade pepper sauce (using sourdough discard), green beans, sweetcorn and homemade air fryer spicy chips.
Wednesday was packed with veggie veggie chilli from the freezer, baby potatoes airfryed (which were boiled up Sunday) seasoned with coriander, common, paprika, cayenne and Turmeric. There were 2 tortilla left from the weekend so I made into a big tortilla crisp each.
Mon and Tues were write offs post vaccine so I had toast. Sunday I made a batch of sourdough tortilla and made lots of little tubs to pick/fill your own-caramelised pepper onions, baby tomatoes, julienne carrot, bag of salad leaves, chickpeas, tahini, mayo, hot sauce, homemade hummus, sliced scamorza, chopped chilli.. I had half a steak as my meat, and my husband had veggie oomph.

My husband had his first nt out on Saturday (I opted out) so I had beans and toast.

Tomorrow is home egg fried rice (pulled rice from the freezer Tonight) , veggie Chinese curry (tub sauce my husband uses, I make Curry from scratch, he Doesnt).

Sunday is veggie pasta sauce from the freezer with side salad - shopping being delivered and husband working, so convenience wins.

Monday is leftover pepper sauce and something potatoes and veg.

Tuesday leftover curry and rice.

Wednesday sourdough pizza I'll make over the weekend and rest in the fridge. I made the tomato sauce today to freeze in little tubs so I won't need to make it for months again.

There's a big drawer in the freezer full of ready meals. The freezer is a lifesaver. We always try to cook twice, or have something carry over to another dinner. I make big batches of stuff to freeze always loads of veg.

Tonight I made extra noodles so my husband could have them for lunch tomorrow.

Love reading what people eat. I'm. An occasional meat eater (incredibly rare I eat steak never mind twice in one week) and my husband is vegetarian.

I'll browse through the thread later as I'm also in a rut and need ideas plus trying to lose weight too

The past week has been (I'm tracking so I actually know for a change!) I'm vegetarian so all seemingly meat things are veggie versions

Friday - fresh filled pasta with my home made tomato sauce and some grated cheddar

Saturday - stir fry with Quorn pieces, onions and peppers, rice and sweet and sour sauce

Sunday - sausages, mash and carrots

Monday - pasta as before but different veg

Tuesday - tinned ratatouille with bread and butter on the side (busy day wasn't up to cooking too)

Wednesday - quiche and salad

Thursday - salad with cottage cheese and ham torn into strips, bread on the side

More varied than I thought actually only one meal repeated that is good for me - I still bloody gained though Blush

Sun chicken and chorizo ragu with rice (bbc recipe)
Monday leftover chicken and chorizo
Tues pesto pasta with peas
Wednesday park piri chicken, cous cous and veg
Thursday really nice vegetable, tomato and paprika rice. Every veg I can find in the fridge!
Friday take away

Monday - children had fresh pasta, we had eggs
Tuesday - honey and mustard chicken thighs, fried potatoes and broccoli
Wednesday - chicken korma, saag paneer, naan and poppadoms
Thursday - children had carbonara, we had cauliflower, spring greens, chick pea and tahini tray bake
Friday - out for dinner

Tuesday - lasagna with garlic bread
Wednesday - murgh makhani (butter chicken)
Thursday - Mexican beef pasta bake
Friday - teriyaki beef with rice and pickled cucumber

Some great ideas here

Monday - fish and chips from chippy
Tuesday - salmon broccoli and tomatoes (fast 800 recipe)
Wednesday - chicken wrapped in parma ham and broccoli
Thursday - tomato soup (fast 800 recipe)
Friday - left over goats cheese frittata from fast day, with cucumber, tomatoes and grated carrot
Today - chilli and rice
Tomorrow - slow cook ham with mash and cabbage

I've recently been able to cook again and I'm trying to get in to the habit of meal planning again.

I don't miss the meals on wheels mains, they were fine, but I am missing the puddings.

So this is a mix of last week and this week and dinners and teas. I also tend to buy a bag of salad as I tend to eat it all, if I get all the ingredients separately I end up throwing them.

Egg salad

Chicken stir fry, I cooked extra chicken and took it out before adding veg and spices with a mini bag of rice and veg

The left over chicken and salad will go in a sandwich.

Baked potatoes and beans, I'll cook extra potatoes and only have half a tin of beans

Salmon fishcakes - not sure whether to make Thai style or use the extra potato to do a UK style, if I do Thai then the potato will make gnocchi.

Beans on toast, using up the beans and I might add cheese or bacon

Steak and mushrooms with either the gnocchi if I have made it, otherwise with new potatoes and veg or salad if there is any left.

I'll also have a meal out of the freezer so maybe a ready meal fish and chips or some salmon with an added 'red salad' that's basically beetroot, red onion, radishes - any red coloured salad food.

Thursday - out for a meal to celebrate DS1 graduation

Gammon steaks, roasted new potatoes and peas
Chilli, rice and broccoli
Chicken satay (with lots of extra sauce!), asparagus green beans and rice
Gnocchi with tomato and mascarpone sauce with salad
Take away pizza
Chicken Kiev, jacket potato and peas and sweetcorn.

Fairly boring! But apart from the takeaway all homemade and manageable for my one year old

Saturday will be meatballs and pasta
Sunday will be another roast dinner

Monday. sliced Smoked salmon (a gift!), bread and creme fraiche
Tuesday: Tandoori cod burgers (a Nadia recipe)
Wednesday: veggie and rice one pot dish
Thursday : veggie burrito bowl
Friday: more of the smoked salmon with a side of prawns Marie Rose and salad
Tonight : home made beef or veggie burgers depending on your meat choices
Sunday: a smoked haddock and sweet potato curry

All seems quite random when I write it down like that!

Thursday Home made chicken & veg curry with red lentil and spinach curry

Fri Hoisin duck noodles

All pretty bland as I'm 12 weeks pregnant. Can't wait to get my appetite and energy back and cook some nice food. Lots of inspiration on here.
