To throw away the chicken every week?

I know IABU but I need to be shamed so I start doing something about it!
Family of 4, we have a roast chicken every week, we eat the breast meat and then I throw away the rest every week, I hate doing it but I'm too lazy and unimaginative to think of what to do with the rest of it!
Please shame me and tell me what you do with yours, I'd love to make it stretch to another meal!

So not only has the chicken has a shitty and short life, you don't even eat it fully? I don't understand. There is literally a world of books and online resources to teach you whatever you need to know about anything!!

Why don't you treat yourself to a smaller but better quality bird that tastes more delicious so you eat most of the meat in one sitting? A proper organic free range one, take the breast and leg meat off to eat on day one, then strip the rest of the carcass for soup the next day.

Take the meat off and buy some tortillas. Put in microwave for 1 minute inside packet so they go nice and soft. stuff them with the chicken, lettuce, grated carrot, cucumber, Mayo, Tabasco etc, whatever you fancy. Kids love making their own stuffed tortilla with their choice of fillings. Can serve with quick cook rice in the side.

There's this new fangled thing called the internet and a search engine called Google. If you go to the search box on Google and type in "Chicken leftovers recipe ideas", low and behold, lots of recipes appear. HTH.

I use the leftover chicken for chicken risotto or sandwiches, boil the chicken carcass for stock, use some for risotto and the rest for chicken soup.

I don't want to shame you but you're throwing away the nicest part of the chicken. Is it posh organic or just cheap like we buy asda?
Maybe just buy chicken breasts in future? Saves wasting.

The leg meat is delicious - lovely and moist.

If you really can't bear it, buy breast fillets or a chicken crown.

Or just eat the legs in sandwiches, or with chips or a bit of salad.

Or add them to a stir fry -or make a chicken and bacon pie (Fry onion, chopped, bacon, mushrooms then make a garlicky white sauce, add the chicken and heat through, top with puff pastry and cook. Or put the mixing a baked potato, or have with pasta. Is delish!)

Okay, I’ll admit I’m a freak but I used to do similar and now I do the complete opposite, but I have a technique!

We roast the chicken and it feeds four of us. Then I put it in the fridge and ignore it till the next day. Then I put it back in the oven and cook it just long enough for everything to go yummy and crispy. Then I take off the meat that’s now hot and crunchy and have that with my lunch. Then I put it back in the fridge. Then the following day I take it back out, turn it over and cook the underside. So that goes all crunchy and hot and I eat the underside with my lunch, and then I bin it (it’s my dirty secret, no one knows I do this 😳).

Twice heated chicken? Jeez you must have a cast iron stomach!! I don't like reheating it once unless I really have too

Monday I cooked a small chicken with Thai green curry paste and coconut milk in my slow cooker.

So far, I've had chicken dinner, two chicken and veg soups, chicken stir fry and tonight, chicken and pepper pizza. Tomorrow I will make a pie with the last breast, some veg and the last scraps of stock.
I am baffled as to why you would throw away good meat.
Are you squeamish about pulling cooked meat off the carcass?

I just buy a chicken crown or chicken breast roll and eat the lot in one sitting. I hate wasted meat. I always think ‘an animal died for that’.

Are we only supposed to eat half a chicken breast? If I bought a packet I'd eat a whole one. If I bought a, whole chicken I'd eat half.
