To throw away the chicken every week?

I know IABU but I need to be shamed so I start doing something about it!
Family of 4, we have a roast chicken every week, we eat the breast meat and then I throw away the rest every week, I hate doing it but I'm too lazy and unimaginative to think of what to do with the rest of it!
Please shame me and tell me what you do with yours, I'd love to make it stretch to another meal!

The legs are the best bit.
The 'brown' meat is fought over in this house.
Also how are you sharing basically 2 chicken breasts with a whole family!

You are being unreasonable. The internet is awash with recipes. I do not understand why you didn’t Google ‘recipes for leftover roast chicken’ instead of posting on here. I usually get 3 meals out of one chicken. But I found the ideas in recipes and on the internet, which is what you should do. Or have you posted this question to wind people up?

Yes, chicken was a rare treat when I was a child. We had lovely beef, lamb, or pork for Sunday lunch. Now I can't eat red meat of any sort so it is chicken all the time, but it doesn't taste anything like those rare chickens of my childhood!

It's a scramble for the legs, in our house. We often just buy packs of thighs as by the time the thigh meat is cooked to our preference, the breast is dried out, on a whole bird.

Though if your family prefer the 5aste of breast meat cooked on the bone, look for quarters or supremes. Not so many places sell them, these days, but some butchers would oblige.

Strip the rest of the meat after your roast. Easiest way to do it is with clean hands - takes a few minutes to get every last bit off.
You can make a delicious chicken soup with the carcass. We use the rest of the meat for eg salads (with peppers, pomegranate, grated carrots & Cardini’s Caesar Salad Dressing 😋) or maybe chicken in a white wine & mushroom sauce with rice? You could pop it in a white sauce with some chopped ham, cooked leeks, put a pie topping on & bung it in the oven. There are SO many possibilities!
You already know YABU but you really must stop wasting decent food!! Why don’t you try a few recipes and see what your family prefers? If if you’re not going to use the rest of the meat though just buy chicken breasts and roast them 🤷🏻‍♀️

Sorry but that is awful! Apart from the waste of money, a living creature was killed for you to eat. I eat chicken but I use all of it, that’s the least you can do if you eat meat.
This ^ do you not care that an animal has died so you can just eat the breasts and chuck the rest away? Shocking.

I have the opposite problem. The chicken is never large enough for all the things I want to do with it!
Chicken jambalaya
Chicken in ciabatta with grated gherkins, anchovy mayonnaise, croutons and lettyce
Chicken fajitas
Roast chicken part 2 with new roast potatoes and veg, padded out with some sausage eat stuffing
Chicken risotto
Thai chicken curry
Pieces of chicken as baby finger food
Any fatty scraps to the cat

Buy a crown or breasts instead or strip the meat off the bones. Boil bones for stock/soup. Use meat for sandwiches, salad, pie, stir fry and all the good stuff others have listed. Chicken enchilada and sour cream yum!

Try stripping chicken and boil up in some gravy, lovely over mash

A 100 different meals can be made, then boil the carcass with onion and carrot and make stock for soup.

I always do chicken and veg fried rice with left over chicken - the whole family love it.
Of course - chicken wraps or sandwiches could be an option for lunch!

Chicken risotto (I just make the risotto as normal with chicken stock and then at the end bung in the leftover chicken, peas and sweetcorn.
Chicken and bacon pasta bake made with a cheese sauce is another family favourite
I also just use it for chicken mayo and sweetcorn sandwich filler.

I love chicken scraps meals!

Chicken pasta (Chuck some bacon/ham/chorizo plus whatever veg you have in the fridge, dollop of cream, some Parmesan). Works well with gnocchi too.
Chicken fried rice
Boil the carcass and make chicken noodle soup. Chuck in onion, carrot, celery, seasoning. Pick out the bones etc and then bung in some spaghetti or small pasta shapes.

I alternate between a creamy/cheesy chicken & broccoli pasta bake and a thai stir fry and then use the carcass to make soup as well which with noodles added makes two lunches for 4 as well. Just Google recipe ideas for leftover chicken and see what you would all eat. There are so many recipes on the internet that being unimaginative is not really a good enough excuse!

I'm squeamish about picking apart the carcass so we just get a crown. Most of the supermarkets now do fresh carved chicken in the chiller cabinets which is even easier.

Chicken & pea risotto (GoodFood recipe online) or chicken & bacon pasta bake (recipe of my own invention).

Or just leftover sandwiches + leftover stuffing.

It’s about 300g of chicken so worth keeping & using.

That is a shocking waste! Apart from the poor bird there are people on our door step who cant afford chicken :(

If I have leftovers from roast chicken I make soup or fried rice or noodle stir fry

OP that’s dreadful- I am a vegan but if I was forced to eat chicken I would , on the basis that it’s died , and why should it’s death be in vain ?. As a vegan even I’d know what to do with leftover chicken.....curry, pasta, topping for jacket potato, soup....please don’t carry on wasting it OP....the planet is wasteful enough without your contribution 😢

So many people going hungry and you knowingly waste perfectly good food. Not to mention the impact on the animal that died to feed you. You should be utterly ashamed of yourself. Agree with previous comments that you should just buy packs of breasts if that all you’re going to eat. I’m appalled.

I used to do this too OP.
Now I try and use the chicken in a curry the next day. Or I let my dog and cat have it.
