To ask for your vegetarian festive dish suggestion?

We’ve got vegetarian guests coming two days after Christmas.

For some reason I’m really uninspired trying to decide on a menu.

I’ve had a look at ready made options (eg M&S nut roast), but they all look pants.

Do you have an original and tasty recipe that you can share? Preferably something else than pasta, soups, couscous, curries or salads. If possible I’d like something that doesn’t require me to cook just before it’s served, but that I can bung in the oven.

Following with interest as my DD has just turned vegetarian and I don't have a clue what to make her.

Stuffed butternut squash? My mom makes it for me with a nut, cranberry and goat’s cheese stuffing. Make the stuffing in advance, slice the squash in half, scoop out the seeds and mushy bits, add the stuffing and cheese, bung in the oven.

@StillCoughingandLaughing, excellent suggestion, thank you - I like to do butternut squash with a blue cheese, pecan nuts and maple syrup (or honey) stuffing. Very yummy and rich. But I’m pretty sure I’ve done it for these guests before...

I’m now thinking I may make a vegetable and apricot tagine, a side of roast pumpkin with tahini sauce, and rice or couscous. Does this sound suitably festive?

I do similar to what the rest of us are having. Mushroom bourguignon went down so well one year, everyone had some. Same with lasagne, I roasted all the veg and tomatoes on the vine, veggie guest took a helping home so must have been okay 😀
I try not to use quorn or tofu usually but did do veg sausages one year for toad in the hole with red onion gravy.

Butternut/beetroot, lentils and goat cheese Wellington? I've always had good feedback for this Smile You can serve it with roast veg, other veg, salad or whatever.

The BBC good food site has a vegan Wellington recipe with mushrooms, chestnuts, and cranberries which is really nice.

Ive made a lovely mushroom and nut wellington before

Quite a meaty texture (apparently)

Went lovely with gravy, cranberry sauce etc

Happy to post the recipe on here if its of any interest to anyone

As far as I remember you can make the filling the day before

I’m a veggie and these all sound delicious - I’m going to be using some this year!

If you want something really super simple then Sainsbury’s have a really tasty nut roast with cheese on top that melts in the oven. It’s in the frozen section and when cooked it looks a bit of a train wreck (the whole thing loses shape a bit) but it tastes so good! Something a bit more sophisticated is the Clives nut roast at Waitrose in the chilled section which looks lovely and tastes really great.

I’m a non meat-eater and the frozen nut roast from M&S is excellent. Lidl are selling a dried one at the moment (a cashew & cranberry one, I forget the brand) which is also very nice. My meat-eating sister remarked that it was miles better than she was expecting it to be. The frozen ones sold in Lidl at this time of year are very good as well.

I do a veggie Wellington with butternut squash, chilli, rosemary, carrots, lentils, peppers, garlic, and any other veg you want then use ready made puff pastry and serve it as part of a roast!

The M&S butternut squash, almond and pecan nut roast is actually really nice.

It says its sold out for ordering on the website, but I'm hoping to be able to get one in store just before Christmas. Those ricotta stacks also look lovely.

I'm making spinach and ricotta pasta crackers for my DD who has just turned veggie. Basically ravioli but shaped as Christmas crackers!

I've made a Beetroot and red onion tarte tatin which was delicious and can be vegan with the right pastry. Cant remember where I got the recipe but a quick google should get you there

We’re going to make this but with dairy in as she’s not vegan - normal cream cheese, normal pastry etc. I’ve got some individual sized quiche tins from Lakeland so I’m going to make single serving ones

Butternut squash. If veggie rather than vegan, cauliflower cheese is traditional and delicious. Nice with a bit of spinach and ricotta added to it really lifts the dish.
