To ask for your vegetarian festive dish suggestion?

We’ve got vegetarian guests coming two days after Christmas.

For some reason I’m really uninspired trying to decide on a menu.

I’ve had a look at ready made options (eg M&S nut roast), but they all look pants.

Do you have an original and tasty recipe that you can share? Preferably something else than pasta, soups, couscous, curries or salads. If possible I’d like something that doesn’t require me to cook just before it’s served, but that I can bung in the oven.

Your tagine sounds lovely as do many of the other suggestions especially red onion tartlets and vegi sausage with red onion gravy. I’m vegi and despise anything with cheese in - it’s such a cop out

Thanks @Catlover77! Our vegetarian guests love cheese. I don’t made cooking vegan (have vegan relatives) but when I do, I tend to gravitate towards curries and tray bakes, and I feel I need to try new things. I’m also happy to use meat substitutes, but one of my guests doesn’t like the texture of meat.

Today I experimented and made a spicy pumpkin, feta, green chillies and pine nut pie, which was really nice. I also made a beetroot and goat’s cheese one, which was nice too but would have been better with red onions (I didn’t have any).
