To ask for your vegetarian festive dish suggestion?

We’ve got vegetarian guests coming two days after Christmas.

For some reason I’m really uninspired trying to decide on a menu.

I’ve had a look at ready made options (eg M&S nut roast), but they all look pants.

Do you have an original and tasty recipe that you can share? Preferably something else than pasta, soups, couscous, curries or salads. If possible I’d like something that doesn’t require me to cook just before it’s served, but that I can bung in the oven.

I do this one. It is a bit fiddly with the grinding of nuts and bread etc but it does mean I save it for special occasions (we do a Cranks nut roast every week) it is really tasty, so much so that I have to remind the meat eaters they have turkey thank you very much

I'm veggie and I LOVE nut roasts. The roasted flavour, crunchy texture. Good protein.

If not nut roast, then a lentil bake.

I wouldn't do more veg, there's enough on the plate already. We like hearty food too!

Pasta etc definitely not, doesn't go at all with a roast dinner.

Delia online has a scrumptious parsnip, sage and blue cheese roulade, which I made last year. It freezes well so you can make it in advance. I rolled it in ground almond to decorate it, then after defrosting and heating it I added a sprig of holly (washed and the stem tightly wrapped in tin foil to avoid puncturing the roulade with potential germs). My non veggie guests begged for seconds as well!

Our most favourite nut roast is the Suma Nut Roast (also available as GF but I haven't tried that one). Comes in a bag, our local health food shop stocks it and it is lovely (also available online, I just checked). I add cranberries/more nuts. Very easy to cook and reheat.

Delia's vegetarian Christmas roulade - it's heavenly! If I could convince the family to give up turkey and have this instead (maybe with some pigs in blankets on the side...) I would!

Imam bayildi is delicious (www.theguardian.com/lifeandstyle/2015/oct/10/aubergine-recipes-turkish-imam-bayildi-hungkar-begendi-roast-with-tarator-yotam-ottolenghi) and looks very festive with a scattering of parsley or coriander and pomegranate seeds; it’s my go-to vegan recipe because it tastes even better made the day before and warmed through!

mushroom and red pepper stroganoff. Retro but actually really really delicious.

Dauphinoise made with Celeriac is lovely as well.

Fancy mushrooms sautéed in garlic and then topped on all-butter puff pastry with some fancy soft cheese and red onions is delicious.

I do a savoy cabbage and reblechon gratin thing with nutmeg and black pepper. Normally add bacon but frankly it would be just as delicious without.

Don't ask me to do vegan! I need the dairy to make veggie cooking fancy.

Lidl have some great nut roasts and veggie wellingtons in at the moment, the cheese and spinach one is divine. Also you can make veggie pigs in blankets with veggie sausages and veggie bacon.

These are from Lidl and are amazing. Serves 3 as the the main event in a veggie roast dinner.

Lots of nice recipe ideas here. I do think it vital that the veggie option goes with all the usual trimmings though so definitely not pasta!

I'm veggie but dislike mushrooms and butternut squash so I'm difficult...I do love nut roast but am equally very happy just to eat all the trimmings - love nothing more than roast potatoes, stuffing and veg with gravy. That Delia recipe looks amazing though, I might have to give that a try.

Thanks for that recipe @HostessTrolley. I think I might make that for myself his weekend but with real cheese (feta) as you said. I’ll likely use a prepared puff pastry as the base.

DP is veggie and I'm allergic to nuts so but roasts are banned but I want to do something nice for him. A couple years ago I did Beet Wellingtons with goats cheese, spinach and red onions instead of mushroom duxelles (I can't bare mushrooms and I ate it too)

Might be buying pre made though this year

As a vegetarian I'd vote for the Wellington. I'd be gutted if I got something that didn't go with the roast potatoes, Yorkshire, cheesy leeks/cauliflower and loads of (veggie) gravy.

The recipe above but I make it a full size Wellington and refrigerate the night before, then eggwash and pop in the oven for 25 or so minutes until done. I’ve used Gorgonzola the last few times and it is lovely. It is so simple and so tasty. All the usual festive sides. I served it to non veggie parents in law last year and they were delighted with it

Forgot to say, I chop the mushroom stalks and fry them with garlic, thyme and shallots and stuff the large mushrooms with them. Also, if any veggies out there haven’t looked up or heard of Denis Cotter a veggie chef from Ireland - do now. He has a recipe for a turnip galette that is beautiful. And a Brussel sprout spicy sauce thing. I’ll see if I can find a link

I've done a sort of wellington for years, with home-made stuffing made of chopped veg, nuts and herbs - or you could use a premade nut roast and crumble it up. On a puff pastry sheet, do a line of stuffing down the middle, then cover it with dried and blanched Savoy cabbage leaves. Do a layer of cream cheese, then another of cabbage, then another of stuffing and then wrap it up. It's shamazing.
