Can I eat out of date Stilton?

I have some Stilton in the fridge that says use by dec 25. It’s been kept in a Tupperware container and smells no worse than your average stilton block.
Should I eat it?

Of course! I ate some unopened bacon today that was, ahem, very out of date but it was still pink and smelt fine. I'm still alive. So far.

If it looks and smells ok, it’ll be absolutely fine. I used up the last of our Xmas Stilton today in a broccoli and Stilton soup. Delish!

I wouldn't because I am neurotic about out if date food since I had food poisoning who h was horrible. But I bet it is fine because by its nature cheese has mould in it and I think most people without my hang ups would eat it
