Even as a northener, I wouldn't have fish chips mushy peas and gravy, BUT, would have chips mushy peas and gravy (sans fish)

Also, gravy and salad should never grace the same plate

Generally though YAbothBU as the dish was cooked in your home, when everyone knows the rule is by the sea or not at all.

I used to work in a chippy and got asked for gravy with fish quite a lot, I just can't get my head around the idea. Yuck!
