Any dairy free/soya free bakers?

What's the best alternative for baking? Oat milk? Rice milk? I'm trying to make savory muffins :-) x

We did Oatly, and vitalite. The Oat milk I could live with, the butter substitutes weren't brill (but then I'm a Butter girl, even marg is only good in chocolate cake!) Cakes with Oil in place of fat (and muffins) were better than butter substitutes.

M&S dairy free marg is the best tasting I've found - tend to use it in all my baking. Oatly works well for savoury recipes, have also used soya and Kara (coconut) - all fine. Happy baking!

Sorry, just saw 'soya free' in thread title - more coffee needed. I'd avoid rice milk as it's just too watery. We are soya and dairy free here too - totally doable. Good luck!

I wouldn't try to convert, but find a recipie that has been designed for oil, e.g. chocolate cake or muffins enjoy!

Oatly CREAM and Block Stork for baking. I find the Oatly 'milk' too runny.

I make a mean white sauce with Block stork, flour and Oatly cream. Add a bit of dill and some fish, and you have a yummy dairy, soy free fish pie. Just make the mash with Vitalite or block Stork!

It's DS3's favourite dinner.

Melt about a heaped dessert spoon's worth of block Stork in a pan. Then mix in plain flour until it goes all lumpy and looks horrid. (Bear with me...!) Let that cook for a minute or so.

Then add a small bit of the Oatly cream and mix in thoroughly. Keep adding the Oatly cream a but at a time, whisking constantly so that each time you add a bit more, it is well mixed in before you add the next bit. (I don't use a whisk, I use a fork, I find you get less lumps and a smoother sauce! Blush ).

When it looks about the right consistency of white sauce, you can then use it in tons of other recipes.

Dairy & soy free Lasagne becomes a possibility, and dairy & soy free macaroni cheese - for that, once the sauce is at the right thickness, coating the back of a spoon rather than running off it, you can take it off the heat and add some grated soy free cheezly to it. Pour over macaroni, hey presto!

Also, by adding a teaspoon of dill to the pan of plain sauce, you can make it into a lovely sauce for fish pie, or just to go over fish.

I have never actually tried it, but my vegan friend uses cocoanut oil instead of butter when baking. It is delicious and healthy.

I could ask a couple if my friends who have egg-free DC's. I can't see how it would be do-able, mind you. Confused

Another dairy, soy free sauce for stuff is to start off the same, with the melted block Stork and flour mixture, and instead of adding Oatly cream, add stock instead.

I make my casseroles like that!

Also, when done with fish stock, it can make a nice sauce for fish. I use that with tuna and sweetcorn pasta. My older DC's now prefer their tuna pasta like that rather than with mayo.

Chicken risotto is another great standby dairy & soy free meal - chicken, arborio rice, chopped peppers frozen if you want a really speedy meal, and chicken stock.

The m&s dairy free Margarine is the best I've found to bake with. KarA coconut milk and almond milk are also good for cooking. Coconut oil is pretty good stuff too.

Ah. Almond milk is out in DS3's case as he is anaphylactic to almonds and all bloody nuts. And he hates coconut milk. Which is rather irritating!

I find that in some cakes, the M&S dairy free spread and Vitalite make the end product too 'oily'. I've never had that issue with block Stork.

I tried to make a Yorkshire pudding with almond milk once, didn't taste good, soya milk was good but now that's out too, next to try oat milk

Lasagne is very appealing but I worry that the cheese would ruin it?
