What's for dinner this week?

I love dinner threads.

Tonight we are having:

Starter- Tomato, cucumber and mozzarella salad
Main- Prawn and spinach linguine
Pudd- Aldi banoffee cheesecake slice

My Dcs are a bit reluctant when it comes to veg so I usually shove a salad at them while I am cooking the rest. I say to them 'The main isn't ready yet, so try that first'. It works- even with my autistic older DS who is usually very difficult to get vegetables into. He will pick at it mostly.

Getting ready for easter- I never do a proper easter lunch but will this year I think. A roast lamb for sure, but keen for ideas for starters and dessert also if anyone cares to share.

As it happened, my case was overweight so some food was left in the airport here - but I was glad of what I brought as I needed them for 2 dinners given the long hours of meetings and that the buffet in the hotel was already closed when we got back…apart from fears about the buffet itself.

Last night, the team went out for a dinner locally.

Tonight I am on another plane, going home to home (as I am currently posted overseas in Europe) for Waster so likely a takeaway with DH after hospital visiting on my way.

I’ll worry about the rest of the week tomorrow- when I expect I’ll need to do a food shop and some thinking.

Cameroon was a bit off piste alright, and interesting, but very much a developing country still. But I was glad to have visited Africa for the first time.

I'd be interested to know what Cameroonian food is like. One of my huge interests is food from other places. I was particularly interested in school meals across the globe at one point. Utterly fascinating.

Tonight the Dcs are having ham and cheese chicken Kyivs with broccoli and potatos. Followed by apple tarts and choc mint ice cream.

DH and I are having homemade red lentil dhal and a sweet potato and chickpea mild curry cooked in coconut milk. With rice and naan.

Pies and vegetables tonight.
Thursday - homemade pizza
Friday - curry (supermarket, not takeaway)
Saturday - probably a pasta dish
Sunday - pies and vegetables again
