What's for dinner this week?

I love dinner threads.

Tonight we are having:

Starter- Tomato, cucumber and mozzarella salad
Main- Prawn and spinach linguine
Pudd- Aldi banoffee cheesecake slice

My Dcs are a bit reluctant when it comes to veg so I usually shove a salad at them while I am cooking the rest. I say to them 'The main isn't ready yet, so try that first'. It works- even with my autistic older DS who is usually very difficult to get vegetables into. He will pick at it mostly.

Getting ready for easter- I never do a proper easter lunch but will this year I think. A roast lamb for sure, but keen for ideas for starters and dessert also if anyone cares to share.

Tonight: lasagne or chicken wings
monday: leftovers for me and scotch egg and chips for the others
tuesday: sausage and mash
wednesday: tacos
Thursday: wrap pizzas
Friday: Chinese out the freezer from Costco

lunches: soups or school dinner for the teenager
breakfasts: cereal, toast and eggs or protein shakes

tonight - jerk belly pork and chicken, rice, flatbreads and a salad
rest of the week - no idea 😂
we don’t do any meal planning, dh just gets on with it and produces dinners.

Tues - bang bang cauliflower, salmon and rice
Weds - goats cheese and beetroot salad
Thurs - Refried bean burritos

Well, tonight I had a tub of Ben & Jerry's strawberry donut ice cream.

Tomorrow I'm having chicken.

Monday: baked chicken filets from frozen, mashed potato, instant ( boxed) stuffing, green beans from frozen. ( my day off).
Tuesday: Chickpea curry with assorted veg in the coconut milk sauce( from scratch) over basmati/quinoa mix
Wednesday: Tortilla 'Lasagna' made with layers of leftover, previously homemade Chili and tortillas, baked with homemade Enchilada sauce and cheese over top.
Thursday: 'Authentic' Black Beans and Rice, with green salad, from scratch.
Friday: Hoping to find Salmon on sale somewhere, with chips and side veg, and cabbage salad.
Otherwise, tuna bake it will be.

I feel grateful when I see this in print, we eat very well when so many are struggling.

Thursday - Pork sausages with Tuscan bean stew

Saturday - Crispy beef, sesame cabbage & rice

Tonight M&S Chicken Kyiv, roast potatoes, broccoli and carrots
Tomorrow baked Salmon, chive mash and other vegetables
Tuesday Pasta - rigatoni with broccoli,garlic, bacon, roasted peppers, sauce single cream and grated parmesan
Wednesday tray bake, Spicy chicken thighs, peppers, baby potatoes, onions
Thursday Pork chops, apple sauce, jacket potatoes and veg
Friday Fish curry and rice, using haddock fillets in freezer

Tonight - pizza, salad, jackets, slaw - I roasted a little ham earlier so it’s pick what you want.
Tomorrow- lamb and chicken curry (we had roast lamb yesterday so will make lamb, mushroom, spinach and spud curry and a butter chicken.
tuesday - leftover curries with dhal (I’m not here so kids are reheating!)
Wednesday - roast chicken (with either veg and gravy or chips and salad)
Thursday - chicken fried rice or chicken and mushroom risotto
friday - pasta carbonara
saturday - steak or chicken with jackets or chips (or maybe raclette?)

Today we had Greek lemon & herb wedges with paprika baked chicken thighs, creamy garlic mushroom sauce and brocolli.

The rest of the week we have a bolognese with linguine salad and garlic bread.
Cajun chicken pasta with roasted peppers.
Veggie & cheesy omlette, homemade chips and beans.
Garlic honey and soy chicken with jasmine rice and stirfried veg.

Thursday is take away night.

I make them according to what needs using by what date but definetly sace money meal planning before shopping.

spag carbonara for tea tonight, cheating. Have shepherds pie with enough for 2 days this week so probably tomorrow and Thursday as we have to head out straight after dinner. Have some chicken frozen that I’ll make into a curry Tuesday and no idea the rest of the week, maybe a pie

Tonight we have quiche and salad

Not sure about the rest of the week (may poach some ideas!) but today I have batch cooked...

Scrambled tofu (for breakfasts)
BBQ/hunters "chicken"
Lemon "chicken"
Chilli non carne
Bolognese
Tofu tikka masala

So no doubt some of those will feature during the week

@CrowMate please can I have details of your cauli and salmon?

I’m afraid it’s not very authentic, but I blanch some florets and then make a mix of sriracha sauce, maple syrup, mayonnaise, and a squeeze of lime juice stir in the cauli and then pop them in the air fryer. Then sprinkle with toasted sesame seeds, chilli slices and some coriander,

For the salmon, I cut it into chunks, marinade it in soy sauce, garlic, honey, rice wine and rice wine vinegar (sometimes add a little ginger or chilli) and then pan fry it.

It’s a quick dinner that everyone here enjoys.

Tonight: beef and pork Gulasch with roast potatoes (because it’s Sunday), cabbage and runner beans.
Homemade chocolate chip cookies with whipped ice cream for pudding.

Tomorrow: penne pasta with mushrooms, green peppers, Nduja and tomato.

Tuesday: pizza with crudités and salad.

Wednesday: tomato and mozzarella risotto.

Have not yet planned or shopped for Thursday onwards yet.

Tonight I made spiced parsnip and carrot soup. Then veggie hot dogs with chips, courgette and lemon linguine, spinach pancakes with feta, tomato and avocado and prob a curry of some sort will all feature during the week depending on when we fancy them and what evenings i can be bothered to cook (the hog dogs and the linguine are easy and quick so they're my can't be arsed options!).

Roast chicken tonight, chicken and mushroom pie tomorrow with leftover chicken, prawn fried rice with stir fry veggies on Tuesday, chick pea and sweet potato curry on Wednesday, enchiladas on Thursday and pizza on Friday. Also made a pot of soup for lunches and banana bread for snacking. I love a well stocked fridge.

I love a dinner thread! Hoping for some inspiration as I feel like I cook the same dozen meals on repeat.
Last night we had king pao chicken and rice (a new recipe).
Chicken nuggets and oven chips tonight.
Got a beef brisket that I'll put in the slow cooker, sort of fajita style with wraps, one night. That might well do 2 nights.
Maybe jacket tatties another night.
Other than that!

I made chicken fried rice with lots of veggies tonight. Hit the spot.
Tomorrow will be homemade mini meatballs in peppercorn sauce with jacket potatoes and veggies.
And Tuesday will be poached salmon and gem lettuce salad with home made honey mustard vinaigrette. Maybe some new potatoes too.

I've decided to challenge myself to completely empty the freezer and fridge before shopping again so, in no particular order:

Small shepherds pie with veg and poss extra mash
quorn Swedish 'meatballs' with ikea sauce and mash
chicken massaman curry and rice/paratha, homemade onion bhaji
chicken sausages which I think I'm going to make into some kind of spicy/creamy/cheesy pasta thing
green Thai veg curry with salmon and jasmine rice

Tonight I roasted a stuffed pork loin wrapped in prosciutto, mash, roasties, asparagus, peas, roasted carrots and parsnips.
Tomorrow katsu chicken curry, cauliflower rice, stir fried veg
Tuesday: Sloppy joes, charred corn, salad, coleslaw
Wednesday: Cod and prawn Moqueca, rice
Thursday: Sweet potato mash, brown lentils and duck breast with kale
Friday: chorizo, prawn and goats cheese linguini
Saturday: homemade pizza and garlic bread, salad
