What's for dinner this week?

I love dinner threads.

Tonight we are having:

Starter- Tomato, cucumber and mozzarella salad
Main- Prawn and spinach linguine
Pudd- Aldi banoffee cheesecake slice

My Dcs are a bit reluctant when it comes to veg so I usually shove a salad at them while I am cooking the rest. I say to them 'The main isn't ready yet, so try that first'. It works- even with my autistic older DS who is usually very difficult to get vegetables into. He will pick at it mostly.

Getting ready for easter- I never do a proper easter lunch but will this year I think. A roast lamb for sure, but keen for ideas for starters and dessert also if anyone cares to share.

Monday - Meze
Tuesday - Taco Tuesday. Probably chicken and chorizo this week but we vary it.
Wednesday - Chicken and bacon pie, croquettes, veg
Thursday - Spaghetti and meatballs
Friday - Takeaway. Probably a Thali and loads of Indian sides
Saturday - Dunno. Might go out for a pub lunch
Sunday - Casserole or BBQ weather depending

Tonight was roast chicken, roasted roots, braised leeks and purple sprouting broccoli- delicious!
Mon - Spag bol
Tues - fish burgers, wedges, salad
Wed - veggie chilli
Thurs - pasta with chicken, mushrooms, spinach, pesto and pine nuts
Friday - Jerk chicken and coconut rice
Saturday - Singapore noodles.
Just done the shopping list and meal plan for the week.

Today we had a goan prawn and veg curry with rice
Rest of the week (order will depend when we're WFH, when we need a quick dinner)
Pulled pork tacos (slow cooker favourite for a work day)
Salmon with a mix of quinoa, brown rice edamame, peppers, broccoli, spring onions etc with soy, sesame, garlic, ginger and some kimchi for those who want it
Greek chicken salad
Sausage and veg tray bake
And then Friday we'll do homemade pizzas DS' request

I said to DH recently, DS eats very differently to how we did growing up, were both from very working class backgrounds and food was simple and hearty, cottage pie, ham egg and chips, casserole, with the occasional findus crispy pancake or boil in the bag fish, other than some cracking curries learned from the neighbours (east end of London)

my menu

Sunday - meal out
monday - pasta carbonara with mushrooms
Tuesday - pork chops with herby butter, roast potatoes and veg
Wednesday- Shepard’s pie
Thursday- chilli
friday - fish and chips
Saturday - out with friends

but I really can’t be bothered to cook.

We did our menu plan earlier before the dreaded Sunday food shop:

M - Fish curry
T - Beef tacos
W - Lamb steaks
T - Chicken kievs
F - Loaded pulled pork fries

I don’t know you all produce such amazing menus. I live alone and have made a lentil and bean casserole to last me the next 4-5 days Grin

I have to force myself to have proper meals when DH is on his week of night shifts. I'd rather have cereal or a bagel but can't live off that (and am trying to limit my carbs!)

Today - chicken sausages, sweet potato fries, Mediterranean roast veg and salad

Tomorrow - salmon, roast potatoes, asparagus and salad

Tue - chicken wraps with quinoa rice

Wed - same as Tue

Thur onwards - no idea yet!

Monday: baked chicken filets from frozen, mashed potato, instant ( boxed) stuffing, green beans from frozen. ( my day off).
Tuesday: Chickpea curry with assorted veg in the coconut milk sauce( from scratch) over basmati/quinoa mix
Wednesday: Tortilla 'Lasagna' made with layers of leftover, previously homemade Chili and tortillas, baked with homemade Enchilada sauce and cheese over top.
Thursday: 'Authentic' Black Beans and Rice, with green salad, from scratch.
Friday: Hoping to find Salmon on sale somewhere, with chips and side veg, and cabbage salad.
Otherwise, tuna bake it will be.

I feel grateful when I see this in print, we eat very well when so many are struggling.

I also do a tortilla lasagne with shredded chicken after we have a roast. In white sauce. LOVE it, and the Dcs do too.

Me too, my veg curry will be eaten till it's gone and then it'll be soup until that's gone!

We currently have a lot of eggs as our hens are really laying again, so this week’s dinners brought to you by all the extra eggs I’m not currently selling.

Sunday: Eggs Benedict on crumpets with homemade hollandaise sauce
Monday: miso udon noodles with boiled eggs and Pak choi
Tuesday: chorizo shakshuka with lemony salad and sourdough toasts
Wednesday/Thursday: Chicken tagine with couscous salad and feta (probably still have leftovers for Friday too)

We eat plant-based as a family:

mon: Crispy chilli tofu bowl with vegetables & rice
tues: Quorn in cider sauce with broccoli/peas and rice
wed: Vietnamese noodle & veg salad with satay sauce & peanuts
thurs: Spicy black beens with plantain, salad & rice
fri: usually a takeaway, pizza or chinese

Tonight roast pork, roasted potatoes, carrots, peas apple sauce with apples harvested from garden, Yorkshire pudding and gravy.
Tuesday pork warmed through in gravy mashed potatoes and mixed veg.
Wednesday pizza
Thursday Chicken gnocchi
Friday spaghetti Bolognese
Saturday All day breakfast

I’m afraid it’s not very authentic, but I blanch some florets and then make a mix of sriracha sauce, maple syrup, mayonnaise, and a squeeze of lime juice stir in the cauli and then pop them in the air fryer. Then sprinkle with toasted sesame seeds, chilli slices and some coriander,

For the salmon, I cut it into chunks, marinade it in soy sauce, garlic, honey, rice wine and rice wine vinegar (sometimes add a little ginger or chilli) and then pan fry it.

It’s a quick dinner that everyone here enjoys.

Thanks! One of my favourite meals is salmon with soy, maple, ginger etc so this might be a good variation on it!

Last night we had sausage casserole with mash
Tonight steak and chips and some veg
Tursday we will cobble together a pasta dinner as flying out Wednesday.
Wednesdsy takeaway pizza!

No idea as I haven't been shopping yet!

I usually go on a Monday but we are out tonight so no cooking. I'll go tomorrow and see what looks nice.

DH was out 6/7 nights last week so it was a heavily pasta based week for me (he's not a pasta fan), this week is a quieter one for him so lots more cooking.

I'm going to ignore our 3 days of Gusto, so we've got:
Friday- pheasant Normandy but cheating by using breasts only.
Saturday- takeaway curry.
Sunday- hopefully out for a roast.
Monday-Italian green lentils, tomato sauce, broccoli and sausages.
Tuesday- freezer surprise.
Wednesday- a slow cooker curry that DH needs to decide on.
Thursday- venison meatballs and pasta.

I have 2 pot noodle type meals, 2 packs of microwave rice, a tin of tuna with couscous and a tin of sweetcorn/beans in my suitcase to bulk out meals if needed this week.

As I will be in Cameroon and not have great access to places outside my hotel (pre-warned about dodgy buffet) and a conference centre. So I’ll probably have a lot of coffee and chocolate as my main food groups…

I am looking forward to Easter at home!

I am having a cold bean salad with onions, fresh tomatos, olive oil and lemon and couscous.

Good morning!

Tonight- Dcs are having cheese burgers with a tomato and cucumber salad and a grated carrot salad.

I am having a cod spinach gratin (Youngs brand) and peas.

I am trying to eat through our freezer and larder for 2 days then a freshly cooked meal the third. Tomorrow I plan for lamb plov which is possibly in my top 3 favourite dishes. I used to make it weekly until the DCs succumbed and decided they liked it also. I more or less use this recipe below, but I don't use cumin as I hate it and I use sweet paprika instead of hot chillies.
