Stilton!

I have a block of Stilton. I love love cheese but am now feeling crackers and Stilton is getting, dare I say it, boring having eaten so much of it over Christmas.
What can I do with it? Only me in the house that likes it so recipe for 1. Have thought about soup but thought I would ask on here for any inspiration.

Stilton on top of a home made burger is divine. Serve with sweet potato wedges and home made coleslaw (to go with this meal I make coleslaw with thinly sliced fennel, apple, sunflower seeds and carrot). Yum.

Recipe: Creamy Stilton Mushrooms on Toast (Serves 2)
This quick recipe takes about 20 minutes to prepare.
Ingredients:

  • 2 slices of quality, thick bread (sourdough works well)
  • 200g (approx. 7 oz) mushrooms, sliced (chestnut or portobello recommended)
  • 50g (approx. 2 oz) Stilton cheese, crumbled
  • 100-150ml double cream (heavy cream)
  • 2 knobs of butter
  • 2 garlic cloves, minced or crushed
  • Fresh thyme or parsley, chopped (optional, for garnish)
  • Salt and freshly ground black pepper to taste
Instructions:
  1. Toast the bread and butter it generously; set aside.
  2. Sauté the mushrooms: Melt a knob of butter in a frying pan over medium-high heat. Add the sliced mushrooms and cook, stirring frequently, until they release their moisture, brown, and soften (about 3-5 minutes).
  3. Add garlic and cook for another minute until fragrant.
  4. Make the sauce: Reduce the heat to low. Gradually pour in the cream and stir well. Bring the mixture to a gentle simmer for 2-4 minutes until it begins to thicken slightly.
  5. Add the cheese: Crumble most of the Stilton into the pan and stir until it melts into the cream to form a smooth sauce. Season with salt (be mindful that Stilton is salty) and plenty of black pepper.
  6. Serve: Spoon the creamy mushroom mixture generously over the toasted bread slices. Garnish with fresh thyme or parsley and the remaining crumbled Stilton.
