What were the last 3 main meals you had.

On Monday I made a big pot of chilli with turkey mince and lots of different beans. We had that with brown rice and a sprinkle of cheese.
Tuesday we had a quick and easy meal that has become a family staple over the years....cheesy mashed potato with peas mixed in, topped with extra cheese and browned under the grill. We had it with sliced tomatoes from the garden and some bacon.
Wednesday I made a bake with the leftover chilli.
It's a bit like a lasagne. Chilli at the bottom, then top with a tortilla wrap that has cream cheese spread on it. I usually do 3 or 4 layers depending on how much chilli I have. The last layer is just a tortilla wrap spread with cream cheese topped with grated cheese. Bake until cooked through.
We have green salad with it.
Chicken and Cashew nut stir fry with noodles tonight.

Last night I ate out at a Greek restaurant with friends and had village sausage, fries, salad, roast veg, tzatziki and flatbread.
Before that, mushroom and cabbage stirfry with egg noodles.
Before that, moussaka, roast pots, brocccoli, sprouts and carrots

Monday was sweetcorn chowder topped with cheesy nachos (Nigella recipe.)

Tuesday was omelette for me and bacon, cheese and spring onion loaded potato skins for DH and DDs (we had some cooked jacket potatoes that needed using up from the weekend.)

Last night was vegetable gyoza red curry bake. First time making it and it was really nice.

Tonight I fancied Cajun halloumi wraps and almost bought the ingredients at lunchtime but we're trying to save money at the moment so I've decided to raid the freezer instead. I definitely have some pasta bake I can heat up for DDs and some chilli DH and I could have.

I just had salmon royale brioche in m&s

At the weekend I made sausages and mashed carrot and butternut squash and potato (all mashed together) and I made my own gravy

It was very nice actually although the sausages had the skin a bit too well done in places. That wasn't ideal

Tuesday night was a chicken noodle stir fry, last night was curry with naan bread and veggie pakora, tonight will be chilli baked potatoes.

We're away on a walking holiday so a bit of a weird week:

Last night was pasta with chorizo, cheese, peppers, garlic and broccoli
Night before was chicken burger and chips at the pub
Monday was roast chicken, cous cous and veg salad and focaccia

This is not a typical week. On Sunday we had a BBQ at home so marinated chicken, salad etc.

Salad for every evening meal since Easter:
Romaine lettuce leaves
4x cherry tomatoes
8x slices of cucumber
2x spring onions
4x mozzarella-stuffed cherry peppers
a hard boiled egg
Then either a tin of tuna or salmon, or cottage cheese, feta or cheddar
Balsamic vinaigrette

Have found cooking a huge load of roasted veg once a week and then portioning it in the fridge really helps with quick meals in the summer

Not sure why people are going back to the weekend for their last three meals when it’s already Thursday?
I had stuffed peppers, pork with rice, and frittata, as well as soup, salad and watermelon, just for lunch (I’m visiting mum!).

I keep seeing this tip about the roasted veg but I don't really like them (makes them all sweet and soft whereas I prefer them lightly steamed or stir fried and crispy). Do you reheat or eat them cold? Chopping a load up in advance also helps.
