Hot weather dinners

What's everyone having for dinners at the moment? It's been hot here & due to be much hotter the next few days & I seem to have a frazzled brain re meal ideas. I'd love some inspiration for easy dinners - hit me with them 😁

Butternut squash soup
Ktzitzot with couscous, chopped salad, leftover roasted butternut squash
Bourekas with eggs and chopped salad

Tomorrow night is classic friday night: roast chicken thighs with dried fruit, potatoes, other veg in the pan, served with red rice, chopped salad and marinated aubergine salad, and challah which still needs baking...

Tonight was jackets done in air fryer. I had tuna and salad, DC had cheese and beans.

Tomorrow is fish cakes, new potatoes and salad

Pasta salad
Quiche
Pizza and salad
Kebabs and couscous
Kebab and pitta
Charcuterie and cheese board
"Picky bits"-roasted red pepper, spanish omlette, bread sticks, dips, salad, croquettes
Nachos
Jacket potato
McDonalds 🤣

I eat salads a fair bit anyway so for a change I had a picky tea which required no cooking/heat. Quiche, cucumber sticks, celery sticks, houmous, wholemeal pitta, brie, pickled onion and potato salad.

Greek salad with added watermelon accompanying some sort of marinated meat ie souvlaki chicken / Yakitori chicken / pulled pork.

Grain salad with beetroot and goats cheese.

Rice salad with bbqd meat.

Puy lentil salad with mackerel.

Calamari with spicy chickpeas
Hot smoked salmon with pea and watercress salad
Roast beef with mustard potato salad and Greek style green beans
Smoked salmon with hard boiled eggs and bean salad
Large tomatoes stuffed with prawn cocktail served with green salad
Salade Niçoise

A Twister for lunch was just the ticket, I’d have probably had the same for dinner if I didn’t have to feed the kids. We had Greek salad. My husband (not British, entirely unphased by 30C) thinks that a cold meal is tantamount to child abuse, so it was a shame that he got home from work early.

Thank-you, that's what I thought it may be my mother began doing it in the 80's.

We had paella
cooked on the bbq tonight.
