Hot weather dinners

What's everyone having for dinners at the moment? It's been hot here & due to be much hotter the next few days & I seem to have a frazzled brain re meal ideas. I'd love some inspiration for easy dinners - hit me with them 😁

@mbosnz how I wish dinner was topic of much robust debate in my house. Rather than me asking for ideas, preferences, requests and getting a flat. Whatever you want.

Thai fish cakes with Asian slaw and cucumber salad
Cod fillets topped with mango chutney and grilled, tomato, onion and cucumber salad and a Bombay potato salad.
linguini with prawns, chilli and garlic

Last night we had chicken and mango salad with a lime and chilli dressing (unusually fancy for us) with homemade potato salad.

TBH in really hot countries people eat hot food anyway! My Singaporean SiL thinks it’s not a ‘proper’ meal if it’s not hot!

Nobody else having normal meals...?

We've had spag bol, fajitas and a chicken dinner this week!

We never want proper meals.

Me neither. To my mind, jacket potatoes match with cold weather. And there’s no way I’m turning my oven on in this weather.

Cold meat and salad, tuna and salad, chicken caesar, koftas with wraps and salad, tacos, burger in a bun with coleslaw, sticky ribs and coleslaw/ corn cob, salmon or seabass with lemon and herb and new potatoes/ peas.

God im going to oven cook chicken drumsticks and wings,
im having them cold with salad and cole slaw with it, son has rice, partner has noodles with his.
I do have a air fryer but dont use it for drumsticks just breast.
i really dont know why thou 🤔

We're having chicken caesar pasta salad tonight and taco salad tomorrow. We had a beef curry last night but I cooked it in the slow cooker overnight and then just heated it up in the microwave.

I am living on home made yogurt ice creams:

Froz raspberries and blueberries mixed with thick strained Greek yog and a splash of rose water. Frozen in the silicone lolly moulds that were in Lidl recently.

And the occasional handful of watercress.

We’ve got schnitzel and salad tonight….veggie lasagne and salad tomorrow. God knows what for the rest of the week. If I lived on my own I’d have some yoghurt and fruit and have done with it.
What’s really annoying is that when I say “what shall we have for dinner this week?” I’m met with “oh don’t worry about it, it’s too hot to think about food”. Guarantee when it’s my turn to cook and I show up with bugger all because it’s too hot to worry about it there will be raised eyebrows 🙄

Kebabs, salad and pitta bread. Bacon sandwich. Bowls of cereal 😃

Possibly jacket spud with salad and tuna mayo. Microwave and then crisp in air fryer for ten minutes so no big ovens involved. Or fish cakes with salad. Or pesto pasta with courgettes and broccoli. Can decide as still sat in garden with a cuppa after work browsing Mumsnet.

Cold sausage sandwich and beer last night.

Spam and cheese sandwich tonight. Sorted!!

When the weather hot up I love spice so chill, curry, noodles etc. I swear hot chilli cooks me down

@minnienono I agree with this, I really wanted a spicy noodle broth for dinner but I'm not the one cooking tonight and I was outvoted 😔. I could make it myself of course but I'm lazy 😅.

I made a big batch of roasted veg this afternoon to take advantage of the free electricity from the solar panels. I did not stay in the kitchen while the oven was on!
Last night it was salmon and salad.
Might be a bbq tomorrow.

I roasted a chicken and we had it with the £7 for 3 salads from Ocado/M&S... and baguette for the boys.
Tomorrow - chicken burgers/beef burgers and chips
Sat - BBQ
Sun - gammon and salads

Salad made more interesting with slices of tortilla, nice coleslaw, fancy Spanish ham and quiche. Or, things on toast. Or cheese, crackers, nibbly things.

Yes @theriseandfallofFranklinSaint I was raised in a warm country and we would often just eat a hot meal, but DH really struggles with that. I do a combination of just "normal" meals such as pasta/curry etc and salmon/gammon/chicken with salads/bread and he loves me enough to BBQ every possible weekend from March to October

We had homemade sausage rolls and chips and Shepherd's pie the last 2 days 🫡 but they were requested by fussy eater, so I did it. Bbq tomorrow! And maybe for the next few days.

When it is hot I tend to do salad with fish done in airfryer, rotisserie chicken, cold prawns, smoked salmon. Sometimes with a baked potato/sweet potato (airfryer), or microwave rice/grains. Or fresh pasta with creme fraiche and smoked salmon/pancetta/chorizo and prawns with pesto/tomato sauce etc. Quick things without lots of stove time or oven heating.
