What's everyone having for dinners at the moment? It's been hot here & due to be much hotter the next few days & I seem to have a frazzled brain re meal ideas. I'd love some inspiration for easy dinners - hit me with them 😁

We’re eating later so it starts to cool down a bit first which helps. Had a baked potato (the McCain microwave ones) tonight and the kids had a microwave pasta thing they like. We didn’t eat until around 9.30pm (my kids are 21 and 17 so it’s not bedtime then for them at least LOL).

Anything that doesn't need the oven!
DH and I are fine with curries, pasta (GF sadly) or whatever.

The boys (young men, both ASD) have something like cold cooked chicken or salmon or pan fried burger or sausages with fries cooked in the air fryer. It heats the house up much less than the oven.

What's sn 80's salad? When it's laid out as a salad bar and you build your own?
I made sandwiches and some deviled eggs and bought potato salad for lunches.
Dh bbq'ed some souvlaki and baked spuds and corn on the cob to last for a few days.

Yesterday we picked up Chinese Food.
Tomorrow chicken enchiladas.
We have central ac or it would only be BBQing or zapping something from freezer.

80s salad is iceberg lettuce, cucumber (peeled, quite often) big tomatoes quartered, beetroot and pickled onions from jars, potato salad made with salad cream, scallions and taramasalata If you're posh.

I'm surprised at so many people suggesting jacket potatoes. That's not the sort of thing I want to eat in hot weather.

We had paella last night, tonight’s is chicken shawarma and tomorrow chicken tikka kebabs on bbq. Saturday we are out but there will be a bbq. Sunday, I may do a bbq brisket on the smoker but I need to get my head into gear for looking after it all night.

Yes 😄I would also add to echo my mums offering in the 80s - slice of ham, slice of cheese, a boiled egg and a slice of bread and butter. With salad cream obviously. These days I also mix it up with rice and sweetcorn - yum, or some new potatoes. It's a retro delight!

And no seasoning or dressing! Other than the salad cream

Stir fry with noodles today. Sausage mash and cabbage tomorrow. Different stir fry with rice on Saturday. (Using up the vegetables while they're fresh).

We don't change our main meals much between summer and winter, but we have more soups and fewer salads for lunch in winter.

loving the hot weather. Going to go for a run and then chill in the pool after work!

Salmon, new potatoes and corn cobs

Oh I love it. Mozzarella without the sensation of chewing rubber. The one I can't stand is halloumi - salty rubber that squeaks against your teeth when you bite into it. But burrata is gorgeous and fresh.

I’m grating summer veg - courgettes, carrots, spring onions and making a mix with water and gram (chickpea flour) to make a thick batter. Fry in small dollops.

I also add turmeric, onion seeds and dried chilli. Needs plenty of S&P.

Serve with tzatziki/ chilli sauce/ mayo.

I would like to come to dinner to your house. When can I invite myself? Grin

Romaine lettuce, cherry tomatoes, cucumber, spring onion, cream-cheese stuffed cherry peppers, hard boiled eggs (or a tin of tuna, or cubed feta, or cold salmon or chicken), with home made balsamic vinaigrette.

This has been my main meal most days since Easter.

At the moment I am obsessed with eating Jasmine rice with smoked salmon , sundried tomatoes, black olives and feta. When its hot it just hits the spot lovely.

It's lovely and cool in my kitchen in the mornings as it doesn't get the sun till late afternoon. If I can bestir myself my plan is to do some cooking this morning and that will be that for the next few days. Tonight is omelettes or something else involving eggs as we have some to use up. I am going to make a black bean and sweet potato chilli, which will keep well in the fridge (flavour improves with keeping), some for Saturday and some for the freezer. Tomorrow marinated chicken cooked in a ridge pan on the hob, or grilled, and we can have it with roast vegetables I will cook today so I don't have to touch the oven tomorrow. Last night was salmon fillets, new potatoes, green beans and lemony herb and mustard sauce, all cooked on the hob.

Last night the kids had chicken wraps and veg sticks in front of the football. I had a nice big bowl of spicy brothy noodles.

We tend to eat more fish, and more bread based meals. Especially at the weekend when everything is bbqed.

I love summer food, quick, easy and light.

Tomorrow is steak sandwiches.
Saturday and Sunday are yet to be decided, and the topic of much robust debate.
