What are you doing with your leftover lamb today?

I've got enough for about 6 people left. I'm thinking gyros but I'm not fully convinced yet.

Easter lunch is always smoked lamb shoulder in flatbreads with salad, feta, hummus, olives, some tzatziki. So we’re just having that again for our dinner tonight.

Korma - we bulk make base gravy and freeze it for use with left over roasts 😋

When I have left over lamb I like to make a shepherd's pie. Or a curry.

Last time I had leftover lamb I cut it up finelyas and cooked it in gravy with peas, carrots and onions then froze it so I could use as a shepherd's pie later, which turned out very well.

Biryani!

Dice the lamb and make a rice pilaf flavoured with Moroccan spices. Add any combination of chickpeas, peas, chopped apricots, raisins, pistachios, chopped green beans, onions, carrots etc etc. Finish with pomegranate seeds and flaked almonds.
If you have any leftover gravy, use it in place of stock to cook the rice.

We love it in wraps with salad and cheese.

Curry

We had a side of salmon yesterday, but I usually make lamb and chickpea saag after roast lamb 😋

I mince it and make shepherd's pie. I put all the left over veg and gravy in. Quick and easy.

Lamb rissoles are nice.

We're doing tacos as I really fancied some nachos and guacamole 🥑 🌮

I haven't got any today as I worked all day yesterday so no roast. But usually it is a lamb rogan josh simmered for ages. The meat just melts in your mouth.

It really isn't. It is delicious. Because it has been marinated in red wine and various other things it doesn't particularly lend itself to then adding other spices and flavours. But with roast veg and creamy potato topping it is very tasty.

Only had a tiny bit left over after a roast, so the dog had it mixed in with her tea.
