What do you do with leftover roast chicken?

Not the most scintillating of topics, granted!

I have a very great deal of roast chicken left. Usually I do chicken noodle soup or creamy chicken pancakes. Or a simple creamy chicken pasta. I'd love some other ideas as my creativity is a bit lacking right now!

I normally make a curry. I also have some with avocado on nice bread for lunch. What I don't use, I freeze and take out as I need for pesto chicken pasta, spicy wraps, stir fry or casserole to give a few examples.

I'd either make a chicken curry or have it the next day with salad or in a sandwich.

I always end up with loads left over because it's just me and 1 young son. I always buy a decent size because I know it will cover several meals for us. Also use the bones to make stock for soup. It freezes well.

Pie. Filling is chicken, bacon and veloute sauce made from the chicken stock. Can also add leeks, mushrooms etc.

I always buy a chicken to roast it up and then shred the meat as I don't really like the texture of chunks of cooked chicken breast. These are what I make with it, off the top of my head:

Coconut chicken curry with rice or water it down and add noodles for a soup
Chicken noodle soup with lots of ginger
Chicken chorizo and chickpea stew
Fajitas or chicken nachos
Chicken and leek/ham pie
Chicken fried rice
Chicken chow mein
Pad thai
Green Thai curry
Chicken Tikka Masala

We make the ultimate left over chicken sandwich. It's huge and has other stuff in it that we make, really filling. We make a roast chicken just for that!

Chicken and leek pie - fry up onion, celery, leek, add flour then milk and a bit of stock to make a white sauce. Add chicken, and mustard for flavour. Use puff pastry for lid.

Thai chicken curry - fry up red onion, red pepper, mange tout, baby corn, add Thai curry paste, then coconut milk and the chicken.

Alternatively use a can of condensed mushroom soup instead of the white sauce.

Stick it in a pot with passata, veg and pasta - bake in the oven, top with cheese if you like.

Chicken croquettes.

Make a stock with the bones, use the stock to make the best French onion soup you have ever had.

Shred and mix with crème fraiche, make a batch of pancakes, fill the pancakes and bake in the oven for 10 mins for crispy chicken pancakes, you can also assemble and then freeze.

Make a batter, the same as you would for pancakes, maybe a little thicker, mix in shredded chicken and sweet corn (tinned or frozen is fine) and fry as fritters.

I don't think I've ever had enough meat left over from a chicken for another meal the next day. I generally give whatever is left to the cat.
