What do you do with leftover roast chicken?

Not the most scintillating of topics, granted!

I have a very great deal of roast chicken left. Usually I do chicken noodle soup or creamy chicken pancakes. Or a simple creamy chicken pasta. I'd love some other ideas as my creativity is a bit lacking right now!

Counter to MN, I put it in the fridge for sandwiches then chuck it out after three days..... It's a standing joke. Not even the cat wants it. I may as well cut out the pause and chuck it straight away.

I make chicken soup with mine which I freeze and take for my lunch at work in the winter. If we have had a roast I chuck everything in - Yorkshires, gravy, veg and buy a bag of casserole veg stick those in, some vegetable stock and blitz it. It’s so nice on cold days.

Chop it up freeze it and use it for work lunches. Easy to grab a bit out as needed the night before.

Chicken vol au vents (fry onion, make white sauce,add mushrooms; bought vol au vents)
Chicken and broccoli lasagne
Chicken pie
Chicken croquettes (whizz in blender and add to mashed potatoes, roll in breadcrumbs)
Cajun chicken pasta (Cajun spice mix and creme fraiche)

I like to use it for quesadillas. Super easy to make and you can personalise them a bit to suit each person depending on what you add to them.

We make the ultimate left over chicken sandwich. It's huge and has other stuff in it that we make, really filling. We make a roast chicken just for that!

The kids’ favourite is creamy chicken pasta, so I often do that. Also a simple paella or risotto. I prefer one pan dishes for this meal - feels like the joy of leftovers, after doing a roast with all its pots and pans!

If there’s enough, cold with jacket potatoes and salad/homemade coleslaw, plus a sauce/dip made of mayonnaise, curry powder, lemon juice and a little mango chutney. Cold chicken can be very dry.

Or a Thai green curry (ready made jar of paste), or sandwiches, or - if there isn’t very much it can go in a stir fry with lots of veg, or a substantial mulligatawny soup - lovely on a cold day. I often have little packs in the freezer labelled ‘chick bits’! - ready for such things.

I make curry sauce and add the cooked chicken to heat through at the end.

Or chop it and mix with mayonnaise and add pieces of veg / seeds / dried fruit and serve with salad.

I always have it cold. Chicken caesar salad is a favourite, or in a lovely big sandwich. I just really don't enjoy the taste or texture of cooked chicken re-heated.

I usually just make chicken and stuffing sandwiches although the dog also ends up getting plenty of the chicken too.
If she knows there's leftovers in the fridge she will run and sit by my foot every time she hears me open the fridge door. 😁
