What do you do with leftover roast chicken?

Not the most scintillating of topics, granted!

I have a very great deal of roast chicken left. Usually I do chicken noodle soup or creamy chicken pancakes. Or a simple creamy chicken pasta. I'd love some other ideas as my creativity is a bit lacking right now!

Salad, sandwiches, risotto (using stock from simmering the carcass), curry, pasta sauce. Or freeze it and use it later for everything in my list except salad.

Not sandwiches either, obviously!

It really is a versatile meat and can really be stretched.

Why just yesterday I ordered a cheese and coleslaw roll to take away. Get that? Cheese and coleslaw. When I later went to eat it I found chicken and coleslaw! I don't eat meat! Luckily I found one of the few porters who does not eat halal and he will eat it today!

I sautee very finely diced onion and celery and occasionally carrots and mushrooms and make a white sauce. Mix with chicken. Then I ask DH to make his super thin crepes (mine are always too bulky!). Add a little bit of the filling and roll up. Then I place them in an oven dish, top with a bit more of the white sauce and some grated cheese and cook until all bubbling. It's really delicious. My mother used to do it and sometimes she would also add a very mild curry to the white sauce for curried chicken pancakes. She does the same with prawns and scallops as well and it is one of my favourite dishes ever.

Pie, risotto or casserole

This week we’ve had chicken fajita pasta, chicken omelette and warmed with roast veg and crispy potatoes.
