Baked potato fillings - no beans

We're on a baked potato diet to try and keep costs down. Please can I have ideas for fillings that aren't beans and don't cost the earth?

I'm fed up of baked beans

Make the potatoes into wedges instead.
Put whatever seasoning on them that you have.

Butter, cheese, coleslaw, jalapeños and gherkins!

I like a mixture of tuna, mayo and some sweet corn. Not had it for years though. Chilli is fine too. Get the tins they are quite inexpensive.

Cheese & coleslaw
Salsa, sour cream, avocado & cheese
Hummus with a side of salad
Bolognese sauce
Cheese savoury mix (grated cheese, chopped onion, grated carrot, cut up pickles & mayo)
Tuna mayo

I'm having egg and cheese mayonnaise with salad tonight.

Onions tomatoes bit of chilli and garlic fried up sprinkle with cheese.

Greek yoghurt & spring onion.
Veggie chilli made with beans and or lentils.
Coleslaw & cheese

Hummus, tomato & spring onion.

Haggis and neeps
Chilli con carne

I need some baked potatoes now!

Sometimes we have ours with peas and gravy. Or peas carrots and gravy. Feels like a roast dinner without the meat. Often had stuffing mix to the gravy.

I'm 100% here for the ideas, there are some cracking ones!

Local cafe here introduced me to cream cheese and dates (you only need 2 or 3 dates chopped up) on a jacket spud - it's to die for! They changed the menu to cream cheese and beetroot when the new owners took over, which is also nice enough but it's not as good.

Spud u like got me onto grated cheese and a spoon of Pickle on top.

Sour cream, spring onion, crispy bacon bits

Coronation chicken

I was brought up in Lancashire, it is perfectly acceptable to have a chip butty, meat and potato pie butty or a fish (in crispy batter) butty.

I wouldn't put those on a potato.

One I got off a similar post was home made coronation chicken maybe on the more expensive side but it’s so good with a BP . I have it much spicier than the shop bought stuff.

I wouldn’t a pie in a butty either!

You wouldnt have fish or a pie with a spud on the side? Strange!

Oh I just remembered this thing my mum used to do..
bake the potatoes then cut them in half and scoop out the middle. Mash it with butter and evaporated milk to be super smooth, mix in some spring onion and grated cheese, put it back into the potato halves then back into the oven or grill. She maybe did something else to them but I can’t remember..?
Sooooo good. I’m haven’t had it since I was a kid and now I want it again

Quorn chili is good!

Egg mayo with crispy bacon, and some cherry tomatoes on the side

That sounds yum I might have to do that one!

A breakfast jacket

Chopped hard boiled egg,bacon and sausage.

You could add mushrooms and add some tinned plum tomatoes

Tuna mayo, lots of pepper, cheddar cheese on top (I zap it to melt!) yum

Soft cheese, pickle, melted cheddar on top.
Salsa, cheese (put it back in the oven/air fryer for a few mins to heat the toppings. Serve with sour cream. You can add crushed up tortilla chips to the salsa before adding the cheese topping if you like.
