Baked potato fillings - no beans

We're on a baked potato diet to try and keep costs down. Please can I have ideas for fillings that aren't beans and don't cost the earth?

I'm fed up of baked beans

Something a bit different - I've done this a few times:

Baked SWEET potato with roasted tomatoes and chickpeas (bake alongside the potato about halfway through the potato's cooking time).
Top potato with the tomatoes, crunchy chickpeas, hummus, and chopped basil. YUM.

I like making a garlic butter, mixing that in with the potato with salt and pepper and then topping with cottage cheese. Tuna mayo with cheese is also popular in our household.

I love a good spicy tuna mix, with peppers, onions, sweetcorn, chillis, maybe some red kidney beans, olive oil, lemon juice!
Plus some melted cheese.
Smoked salmon and cream cheese works well, with chives on top.
But coleslaw has to be the ultimate!
When I'm feeling boring cottage cheese is nice and plain and cooling as well. But not the fat free one!

Now do you remember Heinz Toast Toppers, a creamy (!) concoction that used to be sold in a dinky little tin? They were perfect on a baked potato. My favourite was the chicken and mushroom.
You could make your own similar sauces and freeze them in little pots.

Veggie curry

Tuna mayonnaise

Peppercorn Sauce

Hot dog sausages with fried onions

Small amount of chorizo fried, add onions, courgettes and rosemary

Thick sliced tomatoes sautéed in butter then add a little pesto

Dhal

All other toppings are inferior.

I like sweetcorn and coleslaw, sometimes with cheese, or some ham/chicken/beef (whatever cooked meat is around).
Making your own coleslaw is super easy and so cheap - white cabbage, carrots and I prefer spring onion but any will do. Grate everything and mix with mayo or a yogurt/ mayo combo. Add apple, celery and raisins and you can call it Waldorf salad which means a huge bowl will last even longer and ring the changes a bit.
Garlic mushrooms is another favourite here - fry mushrooms then chuck in a packet of garlic and herb soft cheese

I tend to slice it into long trips but dh prefers just to have the ham as it is. Also good w coleslaw and or cheese.

Chicken Tikka is my favourite.

I air fry chicken that's been marinated in yoghurt and a ready made tikka spice mix, leave to cool and then make a sauce with 50/50 yoghurt/mayo and more of the tikka mix. Mix the chicken and sauce together then add to your potato.

The cold chicken tikka with the hot spud is 😘👌🏻

I like to make extra because I love it as a sandwich filler too.

Fry chopped onions with some garlic, turmeric and chilli, stir in frozen chopped spinach (it comes in chunks that will thaw in the pan), lemon juice and pepper, cook until heated through and stir in feta cubes or some philadelphia or ricotta.

You can do the thing where you scoop out the baked potato and mix with the mixture, then heap back into the skins and grill. Or just use as a topping.
