Baked potato fillings - no beans

We're on a baked potato diet to try and keep costs down. Please can I have ideas for fillings that aren't beans and don't cost the earth?

I'm fed up of baked beans

Cheese savoury. Grated cheese and grated carrot mixed together with mayonnaise. Or salad cream if you want to be old school

I like prawns in a Marie Rose sauce, with salad and avocado.

Other favourite is coronation chicken.

Anything at all. It's just a potato, you can have potatoes with anything. A pile of veggies and some gravy, for instance.

I like chunks of corned beef and butter.

Ds1 has a jacket potato instead of rice whenever we're having rice. So anything you'd put on rice! Although, if you're doing this to keep costs down that doesn't help. Sweet and sour veggies might work.

These are my usual jacket potato fillings

Egg Mayo

Cheese melted and topped with prawns in Marie Rose sauce

Cheese and coleslaw (occasionally with baked beans)

Tuna Mayo and sweetcorn

Sometimes just tons of butter and salt and pepper

Not traditional but fairly cheap and very tasty: caramelised red onion. Ideally, make lots and be patient with the caramelisation, in a pan with butter and on a low to medium heat. Optional variations include adding grated cheese and a slice of tomato (stick back in the oven for a bit to melt the cheese)

Streaky bacon fried to a crisp and crumbled. You can cook it and keep in a jar and sprinkle cold.

Make your own coleslaw so you can do carrot and onion only or carrot and cabbage.

Investigate the tins in the supermarket for different fish / meat to your normal ones. You might find you like tinned meatballs or mince and onion.

If you scrape put some of the potato you can fill the 'skins'.

Then the next day use the scooped out potato to mix with flour to make gnocchi.

You can use an apple corer to make a hole in an uncooked potato and then put sausage meat in to bake in the potato.

Taking @Loubelle70's mushrooms, use mushrooms and condensed mushroom soup if it is cheaper.

Cauliflower cheese
Cheese and coleslaw
Tuna and sweetcorn mayo
Creamed mushrooms
Tuna crunch (tuna, peppers, red onion, mayo)
Veggie bolognaise
Veggie chilli
Veggie meatballs
Loaded jackets (scoop out the insides and mix with cheese, chopped ham, spring onions. Stuff back in the skins and back in the oven until melty and golden)
Corned beef and onions (fried together and piled on top)

Instead of baky sounds how about Rosti potatoes instead ?

You can mix in celeriac and parsnip too. Delicious topped with a fried /poached egg or served with cheese and salad.

Or buy a small pot of cream , mix with milk and garlic /garlic paste, salt and pepper, pour over thinly sliced potatoes and bake in the oven. Dauphinois potatoes. Absolutely delish. Serve with salad or peas and timed tomatoes. Even better cold the next day.

Or if you want cheap and are sick of beans and spuds, try a Dahl with lentils /chick peas from a can, with chopped onions , tinned tommies and some spices. then make some flatbreads or Naan to go with (just mix flour, salt and yoghurt to a dough then flatten out and dry fry.). Cheap and much better than the bought ones. Top it all off with the rest of the yoghurt (you can add grated onion / cucumber to it as well).

salsa, melted cheese, sour cream, guacamole and crushed tortilla chips on top (nacho potato- I just invented it 😂).

You can put anything on baked potato. We often use up leftovers that way

Do you just put the slice of ham in the potato?

I tend to slice it into long trips but dh prefers just to have the ham as it is. Also good w coleslaw and or cheese.

Make a jacket potato as normal then cut in half. Scoop out the flesh, just leaving the shells. Mash the flesh with crispy pieces of cooked bacon, some chopped spring onion, some grated cheese and a splash of milk. Add back to shells and top with some more grated cheese. Stick under grill or in air fryer/oven to allow cheese to melt and it all to get a bit crispy.

Try baked sweet potato for a bit of a healthier option.
