Something interesting to do with sausages

No sniggering in the back now.

I usually do sausages and mash; two types of sausage stew (one with vegetables and passata and one with grapes, onions and balsamic vinegar) or sausage rolls.

But everyone in my family is bored with those options and I am a bit skint until payday so don't want to shove them in the freezer and buy something else.

So ideas gratefully received!!

I use sausage meat (so basically peel the skin off). Fry it until cooked then chuck in a chopped red pepper, chopped beef tomato and cook until they are soft. Then I chuck in some spinach and chopped basil and a teaspoon of crushed chilli flakes. Serve with gnocchi. Is delicious

It's a variation of an Ina Garten recipe (I first heard about it on MN... I first hear most things on MN I think!!) I don't use fennel seeds and I use balsamic vinegar instead of red wine vinegar. I serve it with polenta or rice (most usually rice) and sometimes mashed potato if DS1 is open to mashed potato that day (he has severe food issues). He eats this though without complaints- as long as I remove the tell-tale grapes which he claims to 'hate'.

This is a lovely recipe ,Sausage and lentil simmer BBCgoodfood .Filling and nutritious .I sometimes use veggie sausages or turkey as a healthier option

Buy them uncooked then put funny little sticky wobbly eyes on them and dress them up in little shirts and hats etc.!

Cook sausage, then slice lengthways add tomato chutney, mashed potato, and grated cheese.
Grill.

I used the flavoured ones to make meatballs or a sausage plait with onions and sage, basically a big sausage roll

Easy, cheap and popular with the children.... What I call Mediterranean meatballs. Invented when I was very poor, and usually made with sausagemeat rather than sausages but if you have sausages....

Roll sausagemeat into meatballs. Drop into boiling water. Open a big tin of baked beans and a big tin of tinned tomatoes (preferably chopped). If tomatoes aren't chopped pour off some of the juice into a casserole dish and use a sharp knife to bash them to bits in the tin. Put tomatoes and beans into the casserole dish, add meatballs, add oregano and garlic puree, mix. Put into a hot oven for half an hour and serve with crusty bread.

It's not gourmet food but it's tasty, cheap and easy!

Gourmet food version would be a cassoulet but that involves other kinds of pork meat/sausage, mix of beans and much more time!

I’m going to make this when my nephews come over for the day next week.

My favourite is scotch eggs which are great with salad or baked beans. I save bread crumbs from slicing homemade bread, and use them up making scotch eggs.

Another popular sausage recipe is meat balls. I once tried 'sticky sausage balls' from a Jamie Oliver recipe when he was convincing parents/schools to introduce healthier meals and that was a favourite.

On a recent JO programme, he made pork kebabs using pork mince (plus veg - onions, courgette, peppers, cherry tomatoes I think), which would also be possible with cut up sausages.

Lots of possibilities!

I do a sausage plait, giant sausage roll. Take the sausages out the skins, me x with some cooked onions and whatever herbs/flavouring you want

The apple sausages work well with this. Obviously need pastry
