Something interesting to do with sausages

No sniggering in the back now.

I usually do sausages and mash; two types of sausage stew (one with vegetables and passata and one with grapes, onions and balsamic vinegar) or sausage rolls.

But everyone in my family is bored with those options and I am a bit skint until payday so don't want to shove them in the freezer and buy something else.

So ideas gratefully received!!

Remove the skins and push the meat into pasta tubes for canneloni? Or, again remove skins, season and make meatballs from them?

Toad in hole, really easy and cheap.
Basic sausage, chips and egg.

Remove the skin, break/cut them up into small pieces, fry it then add to pasta sauce and eat with pasta or spaghetti

We take skins off to make meatballs. Either serve with pasta and spicy tomato sauce, or with mash and a dill gravy and redcurrant sauce (Swedish styleee)

Toad in the hole (my kids favourite! I use Jamie Oliver's recipe).

I like the Hairy Biker's sausage casserole (tomatoes, cannellini beans, red wine; I add mushrooms, carrots and peppers too).

Cut up in broccoli pesto pasta.

With chips and beans

As hot dogs in rolls with onions and mustard. Salad on the side.

with a pasta and vegetable bake.

If the links are still joined together make a giant sausage by squishing them a bit then make it into a giant spiral, use 2 skewers to hold it in place.
Call it Catherine wheel sausage, (it tastes the same, obviously, just looks different)

Oh wow!!!! I am so glad I asked! Thank you everyone!

I had forgotten all about Toad in the Hole so Ithat's a possibility. And making little meatballs - I once did that and made a pasta soup with vegetables in a chicken stock. Chicken pasta soup is my staple Sunday night dinner so might swap it for that.

I am going to write a list of every single suggestion and keep it in my recipe file.
I've lost menu inspiration lately so I am really thankful for all the ideas!

Peel the skins off, mix the sausagemeat with chopped parsley & a little crushed garlic. Then cut the 'lids' off some red & yellow peppers, stuff the sausage meat inside the peppers, put the lids back on, put them in a baking dish and bake for 40 mins.

I serve with garlic bread and french beans.

One if mine and dp's favourites. The DC hate it with a passion so I don't cook it often. I like to add some philadelphia or other soft cream cheese to the sauce to make it a little creamy. It's tasty though. I either used sausage meat or squeezed the middle out of the skins of whatever sausages I had.

I squeeze out the meat into little balls and wrap them in streaky bacon and bake. They are a good alternative to stuffing balls.

I also make a kind of mediteranian mix of veggies. Fry a chopped onion until soft. Add garlic, Add broccoli, courgettes. Add chopped cherry tomatoes puree and a little water simmer to cook for a few minutes. Season to taste, finish with crumbled feta.

Sometime I have them plain with coleslaw

Sausage and fried egg sandwich with brown sauce.

Remove the skins and cook with onions garlic , courgette, pepper, cook pasta add some pasta water salt pepper mixed hers oregano / smoked paprika and a splash of cream x

I thought another poster had shared this already, but no, same magazine, different recipe!

Crumbled sausage. Absolutely delicious, and you can swap out ingredients for more seasonal veg.

For this time of year I'd use kale, leeks, spring greens etc. I'd fry off the veg in some butter, with garlic and cracked black pepper and a squeeze of lemon juice, then set them aside. Then do the sausage meat, with the wine and stock (or skip the wine) and add the veg back in for the last few minutes. Serve with new potato skins on mash.

Easy, cheap and popular with the children.... What I call Mediterranean meatballs. Invented when I was very poor, and usually made with sausagemeat rather than sausages but if you have sausages....

Roll sausagemeat into meatballs. Drop into boiling water. Open a big tin of baked beans and a big tin of tinned tomatoes (preferably chopped). If tomatoes aren't chopped pour off some of the juice into a casserole dish and use a sharp knife to bash them to bits in the tin. Put tomatoes and beans into the casserole dish, add meatballs, add oregano and garlic puree, mix. Put into a hot oven for half an hour and serve with crusty bread.

It's not gourmet food but it's tasty, cheap and easy!

Gourmet food version would be a cassoulet but that involves other kinds of pork meat/sausage, mix of beans and much more time!

This is delicious - fresh pesto makes all the difference

Tuscan sausage stew from Fay Ripley family food:
(serves 4 adults)
1 tbsp olive oil
6 sausages
1 medium onion, chopped
1 large carrot, chopped
1 stick celery, chopped
1 medium red pepper, chopped
1 organic chicken stock cube
2x400g tins chopped tomatoes
1x410g tin cannellini beans, drained and rinsed
1 tbsp tomato puree
1 bay leaf
1 tsp dried oregano
1 tnsp good quality pesto optional

(1) pre-heat oven to 180C, Gas 6, heat oil in casserole dish and brown sausages for 5 mins
(2) add onion, carrot, celery and pepper to soften, adding a little more oil if needed and cook for 10 mins
(3) dissolve stock cube in a mug of boiling water and add to the pot with tinned tomatoes, cannellini beans, tomato puree, bay leaf and oregano, bring to a simmer
(4) cook in oven with lid on for 30-40 mins, stir in pesto and serve immediately
